Instant Pot BBQ Pork and Rice

Cube some pork chops into bite size pieces. Slice a yellow onion. Add oil to Instant Pot and turn to Saute Normal function for 4 minutes. Saute the pork and onion.

When Pot turns off add water to Pot. Deglaze Instant Pot well scraping any bits from the bottom.

Sprinkle in some rice but do not stir.

Push the rice grains down into the liquid gently.

Add 1 cup bbq sauce and do not stir. Sprinkle in spices but do not stir.

Place lid on Pot, turn steam release handle to sealing position and set Pot to Pressure Cook High for 4 minutes.

Once Pot is done cooking, allow it to Natural Release for 5 minutes before  venting. Remove lid and stir the contents well.

Decide if you want to add  1/2 cup of bbq sauce. It is based on personal preference. I did add it.

Stir and allow to sit for a couple of minutes to heat up the added bbq sauce.

Serve up Instant Pot BBQ Pork and Rice.
