Instant Pot Beef and Rice

Pour some olive oil into Instant Pot. Turn Pot to Saute Less function for 5 minutes and saute some cut up yellow onion.

Once Pot shuts off add in some chicken broth and deglaze the Pot, scraping any bits of onion from the bottom.

Stir in some gluten free soy sauce.

Sprinkle in some whole grain brown rice. Do not stir. Gently push the rice down into the liquid.

Rub some steak spice on eye of round steaks. Place egg holder or trivet into Pot and set meat on top.

Place lid on the Instant Pot, turn steam release handle to sealing position and set Pot to Pressure Cook High for 15 minutes.

Once Pot is done cooking, allow it to Natural Release for 10 minutes before venting.  Remove lid.

Remove meat and trivet. Cover meat with tinfoil.

Dump some frozen vegetables into Instant Pot. Continue on Keep Warm for 5 minutes with the lid on.

Option One:  After 5 minutes stir and serve the rice with the eye of round steaks.

Option Two:  Shred the steak and after 5 minutes stir it into the rice mixture before serving.
