Instant Beef Round Roast with Gravy

Put olive oil into Instant Pot and turn to the Saute Normal Function for 5 minutes. Sear roast.

Once roast is seared remove and set aside.

Pour in some beef broth to deglaze the Pot, removing any brown bits from the bottom.

Place the roast on a trivet and carefully lower it into the Pot.

Place lid on Instant Pot, turn steam release handle to sealing position and set Pot to Pressure Cook High for 70 minutes.

Once Pot is done cooking, allow it to Natural Release for 15 minutes before venting.

Carefully lift out the trivet and roast. Tent the roast with tinfoil while it rests.

Turn Saute Normal Function back on for 3 minutes. Add some gravy packets to Pot and stir until it comes to a boil.

Turn off Pot. After roast has rested a few minutes longer slice it for serving.
