Instant Pot Brownie Bites - Gluten Free

Melt 1/2 cup margarine or butter in a large microwaveable bowl.

Add granulated sugar, Gluten Free All Purpose Flour, cocoa, baking powder and xanthan gum to the bowl.

Blend ingredients well.

Add 2 eggs and vanilla extract.

Beat together well.

Fold in mini chocolate chips if using.

Spray egg bite molds with oil or cooking spray.

Scoop into molds. Fill about 2/3 full.

Cover molds with sprayed silicone lid or tinfoil. Place on trivet and lower into Pot into which you have added some water.

Place lid on Instant Pot, turn steam release handle to sealing position and set Pot to Pressure Cook High for 12 minutes.

Once Pot is done cooking, allow it to Natural Release for 10 minutes before venting.  Remove lid and molds.

Allow to cool before inverting onto a cooling rack to finish cooling the bites.

Once cooled, serve.
