Instant Pot Ground Beef with Rice and Vegetables

Turn Instant Pot to saute and add some vegetable oil. When heated add diced onions, mushrooms and lean ground beef.

Scrape the bottom of  pot as you stir to prevent a burn message later. Saute for about 3 minutes. The beef will still have a lot of pink remaining.

Add 2 1/2 cups water and deglaze the pot.

Add a packet of gravy mix to 2 1/2 cups of beef broth and add this mixture to the Pot.

Pour in some rice. Do not stir. Sprinkle in some frozen mixed vegetables. Do not stir.

Add some BBQ sauce, maple syrup and soy sauce. Do not stir.

Place  lid on Instant Pot, turn  steam release handle to sealing position and set Pot to Pressure Cook High for 8 minutes.

When finished turn steam release handle to venting position with a quick release.At this point it may be a thin sauce and can be served as soup.

If you prefer it thicker and more like a stew turn the saute function on and add a second packet of brown gravy mix. Stir until well blended.

Turn the Instant Pot off and allow the Ground Beef with Rice and Vegetables to cool a bit before serving. It will continue to thicken as it cools.
