Instant Pot Honey Mustard Chicken and Potatoes

Rub a mixture of olive oil, dried parsley, dried basil, salt and pepper over four chicken breasts.

Turn Instant Pot to Saute Normal Function and add some olive oil. Put chicken breasts in.

Brown chicken on both sides.

After removing chicken pour broth into Pot and use it to deglaze by scraping any bits from the bottom of the Pot.

Add some honey and mustard to the broth and stir to combine.

Place the trivet in the Pot and arrange the chicken breasts on top of it.

Arrange the baby potatoes around the chicken.

Place the lid on Instant Pot, turn steam release handle to sealing position and set the Instant Pot to Pressure Cook High for 5 minutes.

Once Pot is done cooking, allow it to Natural Release for 9 minutes before venting. Remove lid, chicken and potatoes.  Stir in corn starch slurry.

Serve the chicken breasts smothered in the honey mustard sauce.
