Instant Pot Pork Loin Roast with Garlic Mashed Potatoes

Rub the pork roast with some minced garlic and spices.

Add olive oil to the Instant Pot and turn the Pot to Saute Normal function for 5 minutes. Brown the roast.

Remove roast and set aside. Add water to Pot and use it to deglaze,  scraping any food bits from the bottom.

Place the pork roast on a trivet and lower it into the Pot.

Wash some potatoes and arrange them around the roast in the Pot.

Place  lid on the Pot, turn steam release handle to sealing position and set Pot to Pressure Cook High for 20 minutes.

Once Pot is done cooking allow a Natural Release for 10 minutes before venting. Remove roast. Drain liquid and add margarine and minced garlic. Mash while adding milk.

Slice the roast.

Serve.
