Instant Pot Sweet & Sour Pork and Rice

Cut some pork loin chops into bite sized pieces.

Turn the Instant Pot to the Saute Less function for 3 minutes. Add olive oil and the pork chunks.

After the Saute function shuts off the meat will still be very pink.

Add one cup water and use it to deglaze the Pot, scraping any brown bits from the bottom.

Add more water. Sprinkle in some rice and gently push it down into the liquid. Do not stir.

Place lid on Instant Pot, turn steam release handle to sealing position and set Pot to Pressure Cook High for 6 minutes.

While pork and rice are cooking prepare sauce. Dump brown sugar and corn starch into a small mixing bowl and stir to combine.

Add pineapple juice, rice vinegar (or apple cider vinegar), ketchup and soy sauce. Stir to combine.

Once Instant Pot is done cooking, immediately turn steam release handle to venting position. Stir contents.

Turn Saute Less function on for 5 minutes and stir in the sauce. For those that do not want vegetables added you can serve up their portion.

Add some cut up broccoli and chopped pepper. Stir until Pot turns off.
