Instant Pot Whole Chicken Dinner

Break up some bread for stuffing into a mixing bowl.

Turn Instant Pot to Saute Less for 5 minutes and add margarine, diced celery and diced onion.  Then add them to the bread crumbs.

Add sage, poultry seasoning, salt and pepper to some chicken broth.  Pour the mixture into Pot and use it to deglaze.

Wash a chicken and pat it dry with paper towels.

Pour the broth mixture over the bread in the mixing bowl. Stir until all the bread is moistened.  Stuff the cavity with the bread.

Add  olive oil to the Instant Pot and sprinkle in some basil. Turn Instant Pot to Saute Less for 5 minutes and brown both sides of the chicken.

Once browned remove the chicken from the Pot and add water and almond milk to deglaze the Pot.

Place a trivet in the Pot and place the chicken on it.

 Cut up half a dozen potatoes and place them around the chicken in the Pot.

Place lid on Pot, turn steam release handle to sealing position and set Pot to Pressure Cook High for 27 minutes.

While the chicken is cooking cut up some broccoli.

Once Pot is done cooking, allow it to do a Natural Release for 10 minutes before turning  steam release handle to venting position.

Remove lid and transfer chicken to a baking pan. Place the chicken under the broiler for a few minutes to brown.

Mix water and corn starch together. Turn the Pot back to Saute function and add the corn starch and shredded marble cheese to the liquid in the Pot.

Add the broccoli to the Pot to cook.  Use gravy packets to make gravy if desired.

Remove stuffing from chicken and transfer to serving dish.

Slice chicken, serve and enjoy!
