Mandarin Cake  - Gluten Free

In a medium size mixing bowl combine some Bob's Red Mill 1 to 1 Gluten Free Baking Flour and granulated sugar.

Add 2 eggs, baking soda, salt and the juice from a tin of mandarins.

Stir to combine.

Stir in the mandarins.

Scrape into a greased 8" x 8" baking pan.

Place in a preheated 350F oven for 30-35 minutes or until a toothpick inserted in the center comes out clean.

During last 10 minutes of baking time prepare the sauce over medium low heat on the stove top.

Combine some brown sugar, margarine and almond milk. Heat until blended.

Remove cake from oven and turn oven to broil.

Pour sauce over the cake and put it under the broiler for 30 seconds to 1 minute.

Remove from oven and allow to cool for about 15 minutes. Serve directly from pan.

If not serving right away reheat separate pieces in the microwave.

You can serve warm with ice cream or whipped topping.
