Meatloaf - Gluten Free

Put some crackers into a large Ziploc bag and use a rolling pin to crush them into fine crumbs. Set aside.

Prepare sauce by pouring some bbq sauce, ketchup and maple syrup into a small mixing bowl.

Stir to combine.

Put some lean ground beef into a large mixing bowl.

Add the cracker crumbs, eggs, 1/2 cup of the prepared sauce, salt and pepper.

After initially mixing with a large spoon you will need to finish combining with your hands.

Line a large loaf pan with tinfoil and spray it with cooking spray.

Scrape the meat into the loaf pan and push it down to form the loaf.

Top the loaf with the remaining sauce.

Cook for 1 hour in preheated 350F oven or until 160 degrees is reached on a meat thermometer.

Remove from the oven and allow to cool in the pan for 5 minutes.

After 5 minutes use the tinfoil to remove it from the pan to a cutting board.

Slice the meatloaf.

Serve and add your favourite sides for a complete meal.
