Creamy Lemon Squares – Gluten Free

Creamy Lemon Squares start with a buttery crust made from gluten-free flour, brown sugar, and hearty rolled oats.

The filling is luxuriously smooth, made from sweetened condensed milk and lemon juice.  

They slice neatly, making them perfect for serving at gatherings. This recipe yields 20 pieces.

To begin making Creamy Lemon Squares I softened some butter in the microwave on low power.

Then I put some brown sugar and the softened butter into a mixing bowl and use an electric hand mixer to combine them.

Next I measured in some gluten free 1 to 1 baking flour, baking powder, salt and quick cooking rolled oats.  I used the electric hand mixer on low to combine the ingredients.

I dumped the mixture into an 8″ square baking pan that had been sprayed with cooking spray.

Then I pressed the flour mixture firmly into the pan.

Next I prepared the zest from one lemon and juiced it.  For the remaining lemon needed I used some Real Lemon Juice.

Then I added a can of sweetened condensed milk and the lemon juice to a small mixing bowl and stirred to combine.

I poured the milk mixture on top of the base.

Then I sprinkled the prepared lemon zest on top of the milk.

I put the squares in a preheated 350F oven to bake for 35 – 40 minutes or until the squares were starting to brown around the edges.

After removing the squares from the oven I allowed them to cool on a wire rack for at least 30 minutes and then I put them in the fridge to chill before slicing and serving.

The lemon layer sets into a creamy, custard-like topping that slices beautifully.

  4. Stir in the flour, baking powder, salt and rolled oats.
  5. Dump the mixture into the prepared pan and press down firmly to form the base.
  6. Zest a lemon and juice it.  Add more lemon juice to make 3/4 cup.
  7. Combine the lemon juice and condensed milk in a small bowl.
  8. Pour the milk mixture on top of the base.
  9. Sprinkle the lemon zest on top of the milk mixture.
  10. Bake in the preheated 350F oven for 35 – 40 minutes or until browned around the edges.
  11. Remove from oven and let squares cool down.  Chill for a bit before serving.
  12. Once chilled slice into squares.
  13. Serve and enjoy!
