To begin making Chili Lime Noodles I cooked some fine rice stick noodles according to the package directions.

While the noodles were cooking I combined some brown sugar, lime juice, gluten free soy sauce and sweet chili Thai sauce in a small bowl.

I also zested a lime.

Once combined, I stirred in the lime zest.

Then I drained the cooked noodles.

Next I squeezed the lime juice into the prepared sauce.

After returning the cooked noodles to the pot to keep warm, I poured in a bit of sesame oil.

Then I poured in the prepared sauce.

I tossed the sauce and noodles until all the noodles were coated.

This dish carries a certain vibrancy—both in taste and appearance—that makes it stand out on any plate.

The gluten free noodles themselves often absorb the tangy, spicy sauce, becoming infused with layers of complex flavour in every bite.

A subtle sweetness may accompany the heat, rounding out the sharpness of the lime and the intensity of the chili.

Eaten paired with grilled vegetables or protein, Chili Lime Noodles deliver a bold, memorable experience.

This is also a delicious dish as a stand alone simple meal.
