Zucchini Stir Fry

Zucchini Stir Fry is an easy side dish recipe that provides a great way to incorporate this seasonal vegetable into  your menu options.

To begin making Zucchini Stir Fry I sliced up three small zucchini into thin slices.

Then I sliced up one large yellow onion and a red bell pepper.  I used mushrooms that were already sliced.

Once the vegetables were ready I poured some olive oil into a large skillet over medium heat and added in some dried basil.  I also dropped in a pinch of salt and pepper to taste.

Once the oil was heated I dumped in all the vegetables except the sliced zucchini.

I cooked the vegetables, stirring occasionally, until they were starting to soften. About 5 minutes.

Then I added in the sliced zucchini.

After quickly stirring in the sliced zucchini I put the lid on the skillet and reduced the heat slightly.

I continued cooking and occasionally stirring the vegetables until the zucchini had a slightly glazed look.  About 8 - 10 minutes.

Zucchini Stir Fry is a wonderful combination of flavours and colours that will be a great addition to your side dish repertoire.

Ingredients You'll Need to Make This Zucchini Stir Fry:

  • 3 small zucchini
  • 1 large yellow onion
  • 1 red bell pepper
  • 8 oz mushrooms
  • 3 tablespoon olive oil
  • 1 ½ teaspoon dried basil
  • pinch salt
  • pinch pepper

How to Make Zucchini Stir Fry:

  1. Slice the zucchini into thin slices.
  2. Slice up the onion, bell pepper and the mushrooms if not using pre-sliced.
  3. Pour the olive oil into a large skillet over medium heat.
  4. Sprinkle the basil, salt and pepper into the skillet.
  5. Once oil is heated add all the cut up vegetables, except the zucchini, to the skillet.
  6. Cook until starting to soften, stirring occasionally.  About 5 minutes.
  7. Quickly stir in the zucchini, cover and reduce heat slightly.
  8. Cook covered, stirring occasionally, until zucchini get a glazed look. About 8 - 10 minutes.
  9. Serve immediately.
  10. Enjoy!
