Crock Pot Pork Chops with Mushrooms

Crock Pot Pork Chops with Mushrooms is an easy slow cooker recipe for any time of the year.  Bone in pork chops smothered in a creamy mushroom gravy makes a wonderful comfort food main course.

This hearty recipe uses only a few ingredients and is very simple to prepare.  It yields 4 servings.

It really hits the spot on a cooler day but is also great to come home to any day that you are craving some comfort food.

Serve up these juicy pork chops and then be sure to spoon a generous amount of sauce over each serving.

The first step to creating Crock Pot Pork Chops with Mushrooms was to get some olive oil heating in a skillet.

While waiting for the skillet to heat up I sliced a yellow onion and chopped up some mushrooms.

I spread the cut up vegetables in the bottom of the crock pot.

Once the skillet was heated I added the bone in pork chops.

While searing the pork chops I sprinkled some paprika and parsley over top of the cut up vegetables.  I did not stir.

I quickly seared both sides of the pork chops.

Once seared I arranged the pork chops over top of the vegetables in the crock pot.

Then I added gluten free mushroom broth to the heated skillet and scraped any brown bits off the bottom.

Next I scraped the broth mixture into the crock pot and placed the lid on top.

I set the crock pot to cook on low for 6 hours.

After 6 hours I removed the lid.

Then I carefully lifted out the pork chops and set them aside.

With the crock pot still on I stirred in some dairy free cream cheese (you could use regular). 

After the cream cheese had melted I poured in a corn starch slurry.

I stirred until the sauce had thickened.  Just a couple minutes.

Then I returned the pork chops to the crock pot and gently pushed them down into the sauce.

I put the lid back on and allowed everything to simmer for about 5 minutes.

Carefully lift each pork chop out onto a dinner plate.

Smother each pork chop with a generous serving of the mushroom sauce.

The crock pot is a great way to serve up juicy pork chops.

  4. Sprinkle the paprika and parsley on top of the vegetables in the pot.  Do not stir.
  5. Once skillet is heated, sear the pork chops on both sides.
  6. After searing, place the pork chops on top of the vegetables in the pot, in a single layer.
  7. Pour broth into skillet and scrape any brown bits from bottom of pan.
  8. Pour broth mixture over the pork chops in the crock pot.
  9. Place the lid on the crock pot and set it to cook on low for 6 hours.
  10. After 6 hours carefully remove pork chops and set aside.  Leave crock pot on.
  11. Stir in the cream cheese until melted.
  12. Prepare the corn starch slurry and then pour it into the crock pot and continue stirring until sauce thickens.
  13. Return pork chops to the crock pot and push them gently down into the sauce.
  14. Allow everything to simmer together for about 5 minutes.
  15. Serve and enjoy!
