This Lime Jello Mold is another variation for your holiday get togethers. This type of Jello mold is a tradition passed down from my Mother and my grown children expect to see it on the table when they return home for the holidays!
This fruit flavoured side dish is a nice contrast to any savoury meal and adds a festive flair to any dinner table. It is the perfect recipe for St. Patrick’s Day!

To start making this Lime Jello Mold I opened up a can of fruit cocktail and drained off the liquid.
The next step was to dump the contents of two boxes of lime flavoured Jello powder into a large mixing bowl.
I then poured 2 cups of boiling water into the bowl with the Jello powder.
I stirred until all the Jello powder was dissolved.
Next I dumped the fruit cocktail into the Jello and stirred it up.
Then I set the bowl in the fridge for about an hour and 20 minutes until it was almost set.
After removing it from the fridge I added a tub of Cool Whip to the bowl.
I used a rubber spatula to fold the Cool Whip into the Jello.
I sprayed the Jello mold with cooking spray before I scraped in the Cool Whip mixture.
Then I put the lid on and returned it to the fridge. I left it to set for a couple of hours at least. The good thing about this mold is that it can be prepared a day ahead.
Just before dinner was served I removed the lid.
After inverting it onto a serving plate, I removed the center piece of the mold and the Jello released from the mold onto the plate.
I removed the container and set the Jello mold on the dinner table for everyone to enjoy with their holiday meal!
