Strawberry Banana Mandarin Jello Mold

This Strawberry Banana Mandarin Jello Mold is another variation for your holiday get togethers.  This type of jello mold is a tradition passed down from my Mother and my grown children expect to see it on the table when they return home for the holidays!

This fruit flavoured side dish is a nice contrast to any savoury meal and adds a festive flair to any dinner table.

Or you could serve it as a dessert any time of the year for a fluffy, fruity treat!

To start making this Strawberry Banana Mandarin Jello Mold I opened up a can of mandarin orange segments and drained off the liquid.

After draining off the liquid I used a knife to break the mandarin segments into smaller pieces.

The next step is to dump the contents of two boxes of strawberry banana flavoured jello powder into a large mixing bowl.

I then poured in 2 cups of boiling water and stirred until all the jello powder dissolved.

Next I dumped the mandarin orange pieces into the jello and stirred them up.

I then set the bowl in the fridge for about an hour and 20 minutes until it was almost set.

After removing it from the fridge I added a tub of Cool Whip to the bowl.

I used a rubber spatula to fold the Cool Whip into the jello.

I sprayed the jello mold with cooking spray before I scraped in the Cool Whip mixture.

Now I put the lid on and returned it to the fridge.  Leave it to set for a couple of hours at least.  The good thing about this mold is that it can be prepared a day ahead. 

Just before dinner was served I removed the lid.

After inverting it onto a serving plate, I removed the center piece of the mold and the jello released from the mold onto the plate.

I removed the container and set the jello mold on the dinner table for everyone to enjoy with their holiday meal!

  • 1 284 ml (10 oz) can mandarin orange segments
  • 2 packages (85 g or 3 oz each) strawberry banana jello powder
  • 2 cups boiling water
  • 1 litre (34 oz) tub Cool Whip

  1. Open the can of mandarin oranges and cut them into bite sized pieces.
  2. Dump the 2 packages of strawberry banana jello powder into a large mixing bowl.
  3. Boil the water and pour it over the strawberry jello powder. Stir until all the powder is dissolved.
  4. Add the mandarin orange pieces to the jello.
  5. Put the jello in the fridge until almost set. About an hour and 20 minutes.
  6. Remove from fridge and fold in the full tub of Cool Whip.
  7. Spray the jello mold with cooking spray.
  8. Scrape the jello mixture into the mold.
  9. Return to fridge to finish setting. Let set for 2 hours or can be made the day ahead.
  10. When ready to serve remove from fridge and open the lid of mold. Invert onto the serving dish and remove center piece. Mold will slide down onto plate.
  11. Serve with your holiday dinner as a side dish!

Why waist the juice in the can? I drain it into a measuring glass then add enough water til it's 2 cups.
