No Bake Fruity Pebbles Cheesecake

No Bake Fruity Pebbles Cheesecake is a colourful, delicious dessert option.  This gluten free, dairy reduced version is loaded with flavour as well as being pleasing to the eye.

Use your favourite fruits for toppings and add a sprinkling of Fruity Pebbles cereal to finish it off.

This recipe yields 8 servings.

This colourful cheesecake is the perfect choice for any spring or summer occasion and we enjoy it as part of our Easter menu.

To begin making No Bake Fruity Pebbles Cheesecake I dumped some dairy free cream cheese (I used Tofutti brand), icing sugar, lemon juice and vanilla extract into a mixing bowl.

I used an electric hand mixer to beat these ingredients until creamy.

Then I added in one small tub of Cool Whip whipped topping.

Next I used the electric hand mixer again to beat in the Cool Whip topping until well combined.  This took 1 1/2 to 2 minutes.

After the ingredients were creamed together well I folded in some Fruity Pebbles cereal.

I used the prepared gluten free graham crust pictured below.

You could also make a graham cracker crumb base from scratch if you prefer.

I scooped the cream cheese mixture into the prepared crust.

Then I spread the mixture around, distributing it evenly.

Next I decorated the cheesecake with some raspberries and blueberries.  Use whatever fruit you prefer for toppings.

The final step was to add some more Fruity Pebbles cereal to the center of the cheesecake.

Once the toppings were on the top of the No Bake Fruity Pebbles Cheesecake I placed it in the fridge to chill.

Serve up a piece of No Bake Fruity Pebbles Cheesecake knowing that you will be consuming very little dairy.  Those that can enjoy dairy will not taste any difference.

Every mouthful of this light, decadent dessert will be savoured by your guests!

  3. Add in the tub of Cool Whip. Beat again to combine well for about 1 1/2 to 2 minutes.
  4. Fold in 2 cups of the Fruity Pebbles cereal.
  5. Spoon the filling into a 9″ gluten free graham crust.
  6. Spread the filling evenly over the crust.
  7. Use the raspberries and blueberries to decorate the outer edge of the cheesecake.
  8. Sprinkle the remainder of the Fruity Pebbles cereal in the center of the cheesecake.
  9. Chill for at least an hour in the fridge before serving.
  10. Remove from fridge just before serving.
  11. Serve and Enjoy!
