To begin making Almond Joy Cookies I dumped some sweetened coconut flakes into a mixing bowl. 

Next I dumped in some semi-sweet chocolate chips.

I also dumped in some chopped almonds.

Then I poured in a can of sweetened condensed milk.  At this point you could add some almond extract as well if you would like.

Once the ingredients were combined I added in some chopped up maraschino cherries.

Next I used a 2 tablespoon cookie scoop to transfer the cookie dough to a parchment paper lined cookie sheet.  When making these to add to a dessert tray  I often use a smaller scoop.

I moistened my fingers and pushed down on the tops of the cookies to flatten them slightly.

Then I placed the cookie sheet into a preheated 325F oven for 15 – 18 minutes.

Once the cookies were golden brown around the bottom edges I removed them from the oven.

I allowed the cookies to cool on the baking sheet.

These cookies are perfect for holidays, parties, or everyday treats.
