Peanut Butter Cookies 1 to 1 Flour – Gluten Free

Peanut Butter Cookies 1 to 1 Flour are the perfect gluten free dessert for peanut butter lovers because they incorporate natual peanut butter to get that true peanut taste!

 

These are one of the cookies I missed when I had to go gluten free and limit my dairy intake.  Now I have to be careful I don’t eat too many of these delicious treats in one sitting.

Whether you eat these at home or pack them for lunches these gluten free cookies will really satisfy your peanut butter craving.  

Freeze some of your cookies or create a variety for your family by dividing up the cookie dough and adding some chocolate chips, peanut butter chips or maybe nuts.

To begin making Peanut Butter Cookies 1 to 1 Flour I dumped some Crisco shortening, granulated sugar, brown sugar, large eggs and vanilla extract into a large mixing bowl.

Then I used a large wooden spoon to cream those ingredients together.

Once the ingredients were well combined I dumped in some natural peanut butter and stirred it in until well incorporated.

Next I added in the dry ingredients.  I measured in Bob’s Red Mill Gluten Free 1 to 1 Baking Flour, some baking soda and salt.  

When I  measured the flour I scooped it into the measuring cup until I had the desired amount.

Using the wooden spoon again, I stirred the dry ingredients into the dough.

After all the ingredients were combined I used a one tablespoon cookie scoop to drop the dough onto a parchment paper lined baking sheet.

Then I used a floured fork to press the dough balls down slightly.

Next I baked the cookies in a preheated 350F oven for 11 – 13 minutes or until they were starting to turn golden brown around the bottom edge.

After removing them from the oven I allowed them to cool on the baking sheet for a few minutes before transferring them to a cooling rack.

Peanut Butter Cookies 1 to 1 Flour are a delicious snack and can easily be packed for a lunch on the go.

Be creative and divide the batter.  I divided the batter and made plain, peanut butter chocolate chip, peanut butter chip and a mixture of both.

However you choose to make this recipe enjoy a cookie on the run or with a beverage, whether it be almond milk like us, or regular milk!

Ingredients

  • 1 cup shortening
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 2 eggs, large
  • 1 tsp vanilla
  • 1 cup natural peanut butter
  • 2.5 cups Bob's Red Mill 1 to 1 Gluten Free Baking Flour
  • 2 tsp baking soda
  • 1/2 tsp salt

Instructions

  1. Preheat oven to 350F and line a cookie sheet with parchment paper.
  2. Cream the shortening, sugars, eggs and vanilla together with a large wooden spoon.
  3. Add the Bob's Red Mill 1 to 1 Gluten Free Baking Flour, baking soda, and salt to the wet ingredients. Stir until all is incorporated into the dough.
  4. Use a cookie scoop or spoon to drop spoonfuls of dough onto the parchment paper lined cookie sheet.
  5. Press the dough balls down with a floured fork.
  6. Bake the cookies in the preheated 350F oven for 11 - 13 minutes or until starting to turn golden brown around the bottom edges.
  7. Remove from oven and allow to cool on cookie sheet for a few minutes before transferring to a rack to finish cooling.
  8. Makes about 5 dozen cookies.
  9. When cool, serve and enjoy!
