The first step to preparing BBQ Chicken Zucchini Boats was to cut a large zucchini in half. Choose the size and number of zucchini to suit your situation.
Then I scooped some of the zucchini flesh out of the centre of the zucchini halves.
I added some of the flesh to a large mixing bowl.
I lined a baking sheet with parchment paper.

- Spread the oil onto the zucchini.
- Shred the cooked chicken and place it in the mixing bowl
- Add bbq sauce and ¾ cup of the shredded cheddar cheese to the mixing bowl as well. Stir to combine,
- Spoon the meat mixture into the zucchini boats.
- Top with the remaining shredded cheese.
- Place zucchini boats in the oven for about 35 - 40 minutes or until the cheese has melted and the zucchini is tender.
- Cut into serving sizes if using large zucchini.
