The first step to preparing Zucchini Brownies was to stir together some vegetable oil, granulated sugar and vanilla extract in a large mixing bowl.
Then I measured in some Bob's Red Mill Gluten Free All Purpose Baking Flour, cocoa powder, baking soda and salt.
I stirred all the ingredients together well.
Next I grated some zucchini.
Then I stirred the zucchini into the ingredients already in the mixing bowl.
The batter will be very thick but if it is still powdery add 1 tablespoon of water at a time being sure to stir again after each addition. This time I needed to add only 1 tablespoon before it was no longer powdery.
Then I scraped the batter into a 9" x 13" baking pan that I had lined with tinfoil and sprayed with cooking spray.
I used my hands to spread the thick batter all the way to the edges of the baking pan.
Then I placed the pan in the preheated 350F oven for 30 - 35 minutes or until the center sprang back when lightly pressed.
After removing the brownies from the oven I allowed them to cool completely in the pan.
While the brownies cooled I prepared the frosting by first melting some butter on low power in the microwave.
Next I stirred in some cocoa powder, icing sugar and a pinch of salt.
When I had stirred those ingredients together well I poured in some almond milk and a bit of vanilla extract.
I stirred until the frosting was smooth.
Then I scraped the frosting out on top of the brownies.
Next I spread the icing evenly over the brownies in the pan.
