Almond Pan Cookies – Gluten Free

My first attempt for this recipe was with margarine since I also need to limit my dairy intake.  I highly recommend that you use butter when making this recipe.  The margarine version was edible but did not measure up so I did not even save pictures!

For my second attempt I started by dumping some butter into a small sauce pan.

Adding the butter.

Then I melted the butter over medium heat.  When it had melted I dumped in some brown sugar.

I stirred the brown sugar and melted butter together until they came to a boil.

Without stirring I let the mixture boil for 2 1/2 minutes.

While the sauce boiled I lined a 10×15 inch cookie sheet with Schar Gluten Free Crackers.  I made sure to cover the whole pan breaking crackers when necessary.

After laying out the crackers I spread some sliced almonds evenly on top of them.

I then slowly and carefully spooned the sauce over the crackers so that the almonds remained in place.

Now I put the pan in a preheated 400F oven for 6 to 7 minutes.  Be careful not to let it burn.

While the cookies were baking I melted some semi-sweet chocolate chipits in the microwave.

Then I removed the pan from the oven.

I drizzled the melted chocolate on top of the cookies.

After letting it cool for one minute I sliced it into squares.  I then allowed it to cool for another 10 minutes before slicing again and transferring them to a cooling rack.

Almond Pan Cookies are an easy and delicious dessert for any time of the year.  Now that gluten free soda crackers are available we can indulge in this tasty treat.

Once the chocolate had hardened they were ready to enjoy!

Ingredients You’ll Need to Make these Almond Pan Cookies:

  • Schar Gluten Free Crackers
  • 1/2 cup sliced almonds
  • 1 cup butter
  • 3/4 cup packed brown sugar
  • 1/2 cup melted semi-sweet chocolate chips (optional)

How to Make Almond Pan Cookies:

  1. Preheat oven to 400F.
  2. Line a 10×15 inch cookie sheet with the gluten free soda crackers making sure to cover the whole surface. Break crackers if necessary to cover.
  3. Sprinkle the sliced almonds evenly over the crackers.
  4. Melt the butter in a small sauce pan over medium heat.
  5. When melted add the brown sugar and stir until it comes to a boil.
  6. Allow to boil for 2 1/2 minutes and then remove from heat.
  7. Slowly spoon over the crackers in the pan. Use a fork if necessary to replace almonds that get moved around.
  8. Place pan in the 400F oven to bake for 6 to 7 minutes. Do not let burn.
  9. If you want to add chocolate, melt a half cup semi-sweet chocolate chips in the microwave while cracker mixture is baking.
  10. Remove pan from the oven and drizzle melted chocolate over top.
  11. Allow to cool for one minute and then slice.
  12. Allow to continue cooling for another 10 to 15 minutes before again cutting into squares and removing to cooling rack.
  13. When chocolate has hardened serve and enjoy!
