They are tasty little bites that were a tradition at my family Christmas but gluten intolerance prevented me from continuing to enjoy them.

Before beginning to prepare the batter I put 2 cups of raisins in a glass measuing cup and poured 1 cup of boiling water over them.

I let the raisins soak in the boiling water for 5 minutes before draining them.

To start the batter I dumped some shortening and granulated sugar into a large mixing bowl.

Using an electric hand mixer I creamed them together.

Next I added in the eggs and vanilla.

I beat in the eggs and vanilla with the electric hand mixer until the batter was creamy.

Next I dumped in the drained raisins that I had soaked in the boiling water.  There was still some liquid mixed in and that is okay.

I stirred them in with a wooden spoon.

The addition of the dry ingredients included Bob’s Red Mill 1 to 1 Gluten Free Baking Flour, salt, cinnamon, baking soda, baking powder, nutmeg and cloves.

Using the wooden spoon I stirred until all the ingredients were combined.

To make these cookies festive for the Holidays I added in a cup of chopped mixed fruit.

I stirred the mixed fruit into the cookie batter using the wooden spoon again.

Now the batter was ready to scoop out onto a parchment paper lined cookie sheet.

I baked them in a 375F oven for 8-10 minutes or until they were golden brown.

After removing them from the oven I allowed them to cool slightly on the pan before removing them to a cooling rack.

Ingredients You’ll Need to Make these Festive Fruit Cookies:

  • 2 cups raisins

  • 1/4 tsp cloves
  • 1 cup mixed fruit

How to Make Festive Fruit Cookies:

  1. Preheat oven to 375F and line a cookie sheet with parchment paper.
  2. Put the 2 cups of raisins in a glass measuring cup and pour the cup of boiling water over them. Let them sit in the water for 5 minutes and then drain. There may still be a bit of liquid but that is fine.
  3. Measure the shortening and granulated sugar into a large mixing bowl.
  4. Use an electric hand mixer to cream the shortening and sugar together.
  5. Add in the 3 large eggs and the teaspoon of vanilla. Use the electic hand mixer to blend them into the creamed mixture.
  6. Dump the drained raisins into the batter and stir them in with a large wooden spoon.
  7. Measure the Bob’s Red Mill Flour, salt, cinnamon, baking soda, baking powder, nutmeg and cloves into the bowl.
  8. Combine the dry and wet ingredients with the wooden spoon.
  9. Dump in the cup of chopped mixed fruit and again stir to combine.
  10. Scoop the cookie batter onto the prepared baking sheet.
  11. Bake in a 375F oven for 8-10 minutes or until they are golden brown.
  12. Remove cookies from the oven and allow them to cool slightly on the pan.
  13. Transfer cookies to a cooling rack.
  14. Batter will make approximately 84 cookies.
