Gluten Free Bread Pudding

Bread Pudding is an economical and traditional dessert in many homes.  It is very easy to make this pudding recipe gluten free and if necessary dairy free.

Loaded with raisins and spices this is a tasty treat any time of the year.

This recipe yields 9 servings but depending on size of serving can stretch to 12.

I know some people like to smother it in cream but others may prefer to top it off with some whipped dessert topping or ice cream.

Another delicious option is to whip up a batch of Brown Sugar Sauce to pour over the pudding.

Make Gluten Free Bread Pudding a really decadent treat and combine toppings!  I love it with the warm sauce contrasted with the whipped topping.

To start making Gluten Free Bread Pudding I took out some gluten free bread.  I used a loaf that has wide slices so size would be similar to a regular bread slice.

Then I cubed the bread.

I tossed the cubed bread into a large mixing bowl and let it sit out over night to dry out the bread.

To begin the next day, I poured some almond milk over the dried bread in the mixing bowl.

Then I poured boiling water over the raisins I was going to be using in the Bread Pudding. I let them sit while I prepared the rest of the ingredients.

Next I melted some butter in the microwave.

I drizzled the butter over the cubed bread and stirred it up a bit.

Then I put 4 large eggs, granulated sugar, ground cinnamon, vanilla extract, cloves and nutmeg into a small mixing bowl.

I whisked the ingredients together until they were well combined.

Then I spread the soaked bread cubes out into a greased 8″ square baking pan.

Next I drained the raisins.  The raisins could also be stirred in with the bread crumbs if you prefer.

Then I sprinkled the raisins over top of the bread in the baking pan.  I tend to use more raisins than suggested because I love them!

I poured the liquid ingredients over top of the bread and raisins.

I gently pushed all the bread down to be covered with the liquid.

After covering all the bread with the liquid, I baked the pudding in a preheated 350F oven for 45 minutes.

After 45 minutes I removed the Gluten Free Bread Pudding from the oven.

Nothing says comfort food like some old fashioned Bread Pudding!

I served it up warm.

Add some cream or whipped topping to complement the warm pudding.

Have some warm Brown Sugar Sauce ready to smother the pudding with after serving.

Ingredients You’ll Need to Make this Gluten Free Bread Pudding:

  • 6 slices day old gluten free bread
  • 2 cups almond milk
  • 1/2 cup raisins (could use 3/4 cup if like them)
  • 1 cup boiling water
  • 3 tbsp butter melted
  • 3/4 cup granulated sugar
  • 4 eggs, large
  • 2 tsp ground cinnamon
  • 1 tsp vanilla extract
  • 1/2 tsp cloves
  • 1/4 tsp nutmeg

How to Make Gluten Free Bread Pudding:

  1. Cube the gluten free bread slices and leave in mixing bowl to dry out over night.
  2. Preheat oven to 350F and grease an 8″ square baking pan.
  3. Pour the almond milk over the bread in the mixing bowl.
  4. Measure out the raisins and pour boiling water over them.  Set aside.
  5. Melt the butter in the microwave and then drizzle it over the bread cubes in the mixing bowl. Stir a bit to combine.
  6. Whisk together the granulated sugar, eggs, ground cinnamon, vanilla extract, cloves and nutmeg.
  7. Drain the raisins and sprinkle them over the bread in the pan.  You could also stir the raisins into the bread cubes before the bread goes in the pan.
  8. Pour the liquid mixture over the bread.  Slightly press bread down into pan to make sure all pieces are moistened.
  9. Bake the pudding in the preheated 350F oven for 45 minutes.
  10. Remove from oven.
  11. Serve warm topped with cream, whipped topping, ice cream or brown sugar sauce.  Use a combination of toppings.
  12. Enjoy!
