Hobo Casserole Asian Style

Hobo Casserole is easy to make and it is great to be able to mix it up and have a few options to choose from for variety.  This Hobo Casserole Asian style does not disappoint.

To begin making Hobo Casserole Asian Style I sliced up some onions and carrots.

Then I combined some lean ground beef with garlic powder, salt and pepper.

After mixing the seasonings into the ground beef I dumped it into a 9″ x 13″ baking pan.

I used my hands (encased in a plastic bag) to press the meat down evenly in the baking dish.

Then I spread the sliced onion out evenly over the ground beef.

This layer was followed by a layer of sliced carrots.

While waiting for my rice to finish cooking, I prepared the sauce.  You could also use left over rice.  Often I make extra just to have for some casserole recipes.

I measured some brown sugar, corn starch, ginger and crushed chili’s into a mixing bowl.

After stirring these ingredients together I added in some gluten free soy sauce and a bit of water.

Once the Jasmine rice was cooked, I spread it out over top of the sliced carrots in the baking dish.

The final step was to pour the prepared sauce over the rice before cooking.

The I covered the casserole.  You could also use tinfoil.

I baked it for 90 minutes in a preheated 350F oven.

When the casserole was almost finished I cut up some green onions to sprinkle on the top of the rice.

After spreading out the green onions the casserole was ready to serve.

Layers of beef, onion, carrots, and rice will delight your taste buds.

  1. Preheat oven to 350F. 
  2. Slice the yellow onion and carrots.
  3. Put the ground beef in a mixing bowl and add the garlic powder, salt and pepper.  Mix well.
  4. Press the ground beef into the bottom of a 9″ x 13″ baking pan.
  5. Spread the sliced onions over top of the meat.
  6. Place a layer of sliced carrots on top of the onion.
  7. Spread the cooked Jasmine rice over the carrots.
  8. Prepare sauce by combining the brown sugar, corn starch, chili peppers and ginger.
  9. Stir in the gluten free soy sauce and water.
  10. Pour sauce over rice.
  11. Cover casserole and place in the preheated 350F oven for 90 minutes.
  12. Near end of cook time cut up the green onions.
  13. Remove from oven, uncover and sprinkle with the green onions. You could also sprinkle with sesame seeds at this time if desired.
  14. Allow to sit for a few minutes before serving.
  15. Serve and enjoy!

I'm sorry to say I find your website very frustrating to navigate. I frequently want to keep your recipes by going to SHARE, then emailing the recipe to myself. However I have to scroll thru too many screens to get to a printable recipe. For example, I never did find a printable version of the Hobo casserole and two other variations. Please simplify. Thx.
