Undone peppers means my family will actually eat the peppers that are mixed right in, rather than leaving the whole pepper on their plate!

This dinner recipe can yield 4 – 6 servings depending on your sides and appetites.

To begin making Undone Stuffed Peppers Casserole I diced up a red and green pepper.

Then I put some olive oil in a frying pan on medium heat and added lean ground beef, asafoetida (can also use garlic) and black pepper.

I have to be careful with garlic, so after some research I found the above spice which is used in Indian cooking as a garlic substitute.

When the ground beef was just starting to brown I added the diced peppers I had prepared.

Once the meat was completely cooked I dumped in some pasta sauce, grated mozzarella cheese and some cooked rice.

I stirred all the ingredients together well and let the meat mixture simmer for 10 minutes.

Next I transferred all of the meat mixture to a casserole dish.

I shredded more mozzarella  cheese and sprinkled it on top of the meat mixture in the casserole dish.

Then I baked the Undone Stuffed Peppers Casserole in a preheated 350F oven for 25 minutes.

After removing it from the oven it was time to serve it up.

This hearty casserole can be served with some fresh bread and your favourite salad for a complete meal.

Ingredients You’ll Need to Make this Undone Stuffed Peppers Casserole:

  • 2 tbsp olive oil
  • 1 lb lean ground beef
  • 1 red diced
  • 1 green pepper diced
  • 1/4 tsp pepper
  • 3/4 tsp asafoetida or 3 cloves garlic minced
  • 700ml pasta sauce
  • 2 cups cooked rice
  • 1 cup mozzarella cheese, shredded and divided

How to Make Undone Stuffed Peppers Casserole:

  1. Preheat oven to 350F. 
  2. Dice the red and green pepper.
  3. Place the olive oil into a frying pan over medium heat.
  4. Add the lean ground beef to the frying pan. Sprinkle with asafoetida (or add the minced garlic) and pepper.  Break up meat while cooking. 
  5. When meat starting to brown add the diced peppers to the frying pan.
  6. While meat finishes cooking shred the mozzarella cheese.
  7. When the meat is cooked, drain before adding the pasta sauce, 3/4 cup of the shredded cheese and the cooked rice to the frying pan and stir to combine. Reduce heat to simmer for 10 minutes.
  8. Scrape the meat mixture into a 2L casserole dish.
  9. Sprinkle the remaining shredded mozzarella cheese over the top of the casserole.
  10. Bake in the preheated 350F oven for 25 minutes.
  11. Remove casserole from oven. 
  12. Serve and enjoy!

I fixed this for supper, much easier than stuffed peppers. I did add half a large onion (threw it in before I realized it wasn't actually called for in the recipe) and my husband pronounced it really good. "Save this recipe, Babe" LOL He scooped out a big serving to take to work tomorrow. I made the rice in my instant pot which made it extra easy.
