Loaded Coleslaw

Loaded Coleslaw is a refreshing side dish in the warmer weather.  This colourful salad is filled with bacon, tomatoes, cucumbers, Asian pears and then smothered in a slightly sweet yet tangy dressing.

This crunchy salad is a great addition to family gatherings or it can dress up a simple meal at home.

Loaded Coleslaw will yield about 12 servings depending on what other menu items you are serving.

Every spoonful is loaded with colour and flavour!

To begin making this recipe I dumped a bag of store bought coleslaw mix into a large salad bowl.

Then  I dumped in some cut up grape tomatoes, cut up cucumber and bacon crumble.

The next step was to prepare the dressing.  To do this I stirred together some Miracle Whip, mustard, granulated sugar and a bit of vinegar into a small mixing bowl.  I give suggested amounts of each in my recipe but you can make adjustments to suit your taste buds.

Then I poured the dressing over the ingredients in the salad bowl.

I stirred until all the ingredients were coated with the dressing.

Then I added in two Asian pears that I had cut up earlier.  If you do not have Asian pears you just need a firm type of pear or you could skip adding this ingredient.

After stirring in the Asian pears I added a bit of salt and pepper.  People can add more to their individual servings if they desire.

Whether entertaining guests or just having a quiet meal at home Loaded Coleslaw will add a burst of colour to your table.

Ingredients You’ll Need to Make this Loaded Coleslaw:

  • 1 lb (454g) bag coleslaw blend
  • 9 oz (255g) grape tomatoes
  • 1 1/2 cup cut up cucumber
  • 1 cup bacon crumble
  • 2 Asian pears diced
  • 1 tsp pepper
  • 1/2 tsp salt
    Dressing:
  • 3/4 cup Miracle Whip
  • 2 tbsp mustard
  • 1 tbsp white vinegar
  • 1 tbsp sugar

How to Make Loaded Coleslaw:

  1. Dump the coleslaw blend into a large salad bowl.
  2. Cut the grape tomatoes in half, cut up the cucumber into quarters and add both to salad bowl.
  3. Dump in the bacon crumble.
  4. Mix the dressing by stirring together the Miracle Whip, mustard, vinegar and sugar. Take a little taste and make adjustments if necessary to suit your own taste buds.
  5. Pour dressing over ingredients in salad bowl and stir until ingredients are coated.
  6. Dice the Asian pears (or other crunchy pear) if you are adding them. Dump them into the salad bowl.
  7. Add the salt and pepper and stir again until all ingredients are coated.
  8. Place in fridge until ready to serve.
  9. Serve and enjoy with your favourite main course!
