To begin making Orange Rhubarb Loaf I diced some rhubarb.

Next I dumped some Bob’s Red Mill 1 to 1 Gluten Free Baking Flour, brown sugar, granulated sugar, baking powder, baking soda and salt into a large mixing bowl.

Then I folded in some orange zest.

Stir in the orange zest.

After combining the dry ingredients I made a well in the center and added in some orange juice, vegetable oil, 2 large eggs and some vanilla extract.

Once the ingredients were well combined I folded in the diced rhubarb.

I then greased 9″ x 5″ loaf pan.

Next  I scraped the batter into the prepared pan and spread it out evenly.

Then I put the loaf pan in the preheated 350F oven to bake or 50 – 55 minutes or until a toothpick inserted in the center came out clean.

After removing the loaf from the oven I allowed it to cool in the pan for about 10 minutes.

Then I turned the Orange Rhubarb Loaf out onto a cooling rack to finish cooling.

While the loaf was cooling I prepared the glaze by putting some icing sugar and orange juice into a small bowl.  You can skip this step if you prefer a plain loaf.

Then I stirred these together well.  You can make the glaze as thin or thick as you like to suit your tastes.

Next I spread the glaze out over the top of the cooled loaf.

Ingredients You’ll Need to Make this Orange Rhubarb Loaf:

  • 1 3/4 cups Bob’s Red Mill Gluten Free All Purpose Flour Blend
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • zest of one orange
  • 1/2 cup orange juice (from orange and then topped up if necessary)
  • 1/3 cup vegetable oil
  • 2 eggs, large
  • 1 tsp vanilla extract
  • 1 cup diced rhubarb
    Optional Glaze:
  • 3/4 cup icing sugar
  • 2 1/2 tsp orange juice

How to Make Orange Rhubarb Loaf:

  1. Preheat oven to 350F and spray a deep 9″ x 5″ loaf pan with cooking spray. 
  2. Dice the rhubarb and zest the orange.
  3. Measure the Bob’s Red Mill 1 to 1 Gluten Free Baking Flour, granulated sugar, brown sugar, baking powder, baking soda and salt into a large mixing bowl.  Stir to combine.
  4. Make a well in the center of the dry ingredients and add the orange zest, orange juice, vegetable oil, eggs and vanilla extract to the bowl.  Stir to combine.
  5. Fold in the diced rhubarb.
  6. Scrape batter into prepared loaf pan.
  7. Place loaf pan in the preheated 350F oven for 50 to 55 minutes or until a toothpick inserted in the center comes out clean.
  8. After removing loaf from oven allow to cool in pan for about 10 minutes.
  9. After 10 minutes turn out onto a cooling rack to cool completely.
  10. If using the glaze combine the icing sugar and orange juice.  Cover top of loaf with glaze and allow to set.
