The first step is to prepare the sweet potatoes for the top of the Shepherd’s Pie with Sweet Potatoes.  I washed 5 large sweet potatoes and pierced each one 5 or 6 times with a fork.

I then cooked them in the microwave on high.  Calculation for total time is 5 minutes for 1 potato and add 2 minutes for each added potato.  Therefore I cooked the sweet potatoes for 13 minutes.  I set them aside to cool.

Next I poured olive oil into a large skillet before dumping some extra lean ground beef in the skillet.

After breaking up the meat I added in the onion, salt and pepper.

While the meat was cooking I cut the sweet potatoes in half.

I scooped the flesh into a mixing bowl and added margarine and minced garlic.

Using a potato masher I combined the ingredients until no large lumps remained.

I cooked the meat over medium heat until no pink remained.

When the meat was cooked I added in the water and two packets of gravy mix.

I stirred the ingredients together until all the meat was coated in gravy.

Now I transferred the meat mixture into a 9 X 13″ baking dish.

Next I sprinkled some frozen peas on top of the meat.

Follow the peas with some frozen corn.

The final step was to cover everything up with the sweet potatoes.  Use at least 6 cups.

I placed the Shepherd’s Pie with Sweet Potato in a 400F oven for 40 minutes.

After removing it from the oven I allowed it to cool in the pan for a few minutes before serving.

Ingredients You’ll Need to Make this Shepherd’s Pie with Sweet Potato:

  • 6 cups mashed sweet potato
  • 1/4 cup margarine
  • 2 cloves minced garlic
  • 2 tbsp olive oil
  • 2 lbs extra lean ground beef
  • 1 yellow onion diced
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 cup water
  • 50g Gluten Free Brown Gravy Mix (2 packets)
  • 1 1/2 cups frozen peas
  • 1 1/2 cups frozen corn

How to Make Shepherd’s Pie with Sweet Potato:

  1. Preheat oven to 400F.
  2. Wash sweet potatoes and pierce them 5 or 6 times with a fork.
  3. Place sweet potatoes in the microwave and cook on high for 5 minutes for the first potato and add 2 minutes for each additional potato.
  4. Allow potatoes to cool while you prepare the meat.
  5. Put the olive oil and extra lean ground beef in a large skillet over medium heat.
  6. Add the diced onion, salt and pepper and cook until no pink remains.
  7. While meat cooks cut the sweet potatoes in half and scoop the flesh into a mixing bowl.
  8. Add 1/4 cup margarine and 2 cloves minced garlic to the sweet potatoes. Mash with a potato masher until no large lumps remain.
  9. Add 1/2 cup water and the two packets of gluten free brown gravy mix to the meat. Stir until all the meat is coated in the gravy.
  10. Transfer the meat into a 9 x 13″ baking pan.
  11. Sprinkle the peas and carrots over the meat.
  12. Spread the sweet potatoes over the ingredients in the baking pan.
  13. Place in 400F oven for 40 minutes.
  14. When cooked allow to cool for a few minutes before serving.

Wow. This was super yummy! My husband, my mother, and both of our twin girls absolutely loved it! I saw the recipe a few days ago but didn’t have the gravy packets. I made it for a Friday meal instead of ordering out and I’m glad I did. The only differences in the recipe were that I used ground turkey and I covered it all with sweet potatoes on the right and regular potatoes on the left. I had never made shepherds pie and wanted to taste both worlds. Thank you so much for taking the time to share your recipe with me.
