Raisin Oat Bran Muffins – Gluten Free

To begin I added some vinegar to a cup of almond milk. 

Then I put the oat bran, milk with vinegar added and the baking soda in a large mixing bowl.

I mixed the ingredients together with a rubber spatula and then let it sit for 10 minutes.

Next I took out a small mixing bowl and added vegetable oil, brown sugar, maple syrup, an egg and meringue powder.

Using a whisk I combined these ingredients until smooth.

Then I dumped in the raisins.

I used a wooden spoon to stir them into the other ingredients in the bowl.

Now I scraped the ingredients in the small bowl into the large mixing bowl containing the oat bran and stirred everything together.

Then I added the Bob’s Red Mill Gluten Free All Purpose Flour, baking powder, ground cinnamon, xanthan gum and salt.

Using the wooden spoon again I stirred the ingredients until they were just combined.  Do not overmix.

I scooped the batter into muffin pans that had been sprayed with cooking oil.

Then I baked them in a 375F oven for 18-20 minutes or until a toothpick inserted in the center came out clean.

I allowed the muffins to cool in the pan for about 10 minutes before turning them on their sides.  You could transfer them to a cooling rack as well.

Ingredients You’ll Need to Make these Raisin Oat Bran Muffins:

  • 1 cup almond milk
  • 1 tsp vinegar
  • 1 1/2 cups Bob’s Red Mill Gluten Free Oat Bran
  • 3/4 tsp baking soda
  • 1/2 cup vegetable oil
  • 1/2 cup brown sugar
  • 2 tbsp maple syrup
  • 1 egg, large
  • 1 tbsp meringue powder
  • 1 cup Bob’s Red Mill Gluten Free All Purpose Flour Blend
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 3/4 tsp xanthan gum
  • 1/4 tsp salt
  • 3/4 cups raisins

How to Make Raisin Oat Bran Muffins:

  1. Preheat oven to 375F.
  2. Add the tsp of vinegar to the cup of almond milk.
  3. In a large mixing bowl combine the oat bran, milk with vinegar added and the baking soda. Let sit for 10 minutes.
  4. In a small mixing bowl whisk together the vegetable oil, brown sugar, maple syrup, egg and the meringue powder.
  5. Add the raisins.
  6. Scrape the ingredients from the small bowl into the oat bran mixture in the large mixing bowl and combine.
  7. Add the Bob’s Red Mill Gluten Free All Purpose Flour, baking powder ground cinnamon, xanthan gum and salt.  Stir until just combined.
  8. Scoop the muffin batter into greased muffin tins.
  9. Bake at 375F for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  10. Remove from the oven and allow to cool in the pan for about 10 minutes before flipping them on their sides or removing them to a cooling rack.
  11. Serve and enjoy!

Could I use the Bob Mill’s 1 to 1 blend, and leave out the xanthum gum?
