Sweet Chili Thai Tuna Casserole – Gluten Free

Sweet Chili Thai Tuna Casserole is an easy stove top recipe that provides lots of flavour and a bit of heat.

This gluten free pasta dish is loaded with tuna and vegetables to provide a hearty meal for the whole family.

This colourful recipe provides a variety of textures and flavours with every bite.

This tasty recipe yields 6-8 hearty servings depending on whom you are feeding.

To begin making Sweet Chili Thai Tuna Casserole I prepared some gluten free pasta according to package directions but cut the time down by a couple of minutes.

I used Tinkyada Penne but you can use whatever you prefer.

While the pasta was cooking I prepared the vegetables. I cut up some grape tomatoes, yellow pepper, red pepper, a head of broccoli and I julienned some carrots.

Once the pasta was cooked I strained and rinsed it.

Then I retuned it to the pot it had cooked in over med/low heat.

I quickly stirred in some Sweet Chili Thai Sauce and flaked light tuna.

After those ingredients were stirred in I added the vegetables I had prepared earlier.

Once the vegetables were incorporated I added some Miracle Whip.

I put the lid on the pot and let the vegetables heat up for 5 minutes while I stirred it occasionally.

Serve Sweet Chili Thai Tuna Casserole immediately.

This loaded pasta dish can be enjoyed on its own or you can serve it with bread or a side salad.  It is hearty enough to be a full meal on its own!

Sweet Chili Thai Tuna Casserole is an easy stove top recipe that provides mouthful after mouthful of delightful texture and flavour.

For those that like a bit more heat, have some Sweet Chili Thai Sauce available to add to their serving.  

Some members of my family don’t like too much spice so I didn’t want to overdo it when originally preparing the recipe.

Ingredients You’ll Need to Make this Sweet Chili Thai Tuna Casserole:

  • 454g gluten free penne pasta (16 oz)
  • 360g flaked light tuna (3 cans) (13 oz)
  • 3/4 cup Sweet Chili Thai Sauce
  • 1/2 red pepper sliced
  • 1/2 yellow pepper sliced
  • 1 head broccoli florets
  • 551 ml grape tomatoes cut in half (1 dry pint)
  • 1 cup julienned carrots
  • 1 cup Miracle Whip

How to Make Sweet Chili Thai Tuna Casserole:

  1. Prepare gluten free pasta according to package directions but cut time down by a couple of minutes.
  2. While pasta cooking cut up peppers, broccoli, tomatoes and carrots.
  3. When pasta cooked strain and rinse. Return to pot on med/low heat.
  4. Immediatly add the flaked tuna and Sweet Chili Thai Sauce. Stir.
  5. Add in the cut up vegetables. Stir.
  6. Dump in the Miracle Whip. Stir.
  7. Put lid on pot and allow to warm vegetables for 5 minutes stirring occasionally.
  8. After 5 minutes serve immediately.
  9. Top with extra Sweet Chili Thai Sauce if you prefer more heat.
  10. Enjoy.
