Air Fryer Meatloaf Salsa Verde

Air Fryer Meatloaf Salsa Verde is the perfect dinner recipe any night of the week.  This gluten free meatloaf option is loaded with flavour and topped with a delicious sauce.

This recipe makes four small loaves that can be eaten all at once or save some to make meatloaf sandwiches.

To make the tasty sauce just mix salsa verde with your favourite bbq sauce.

This reciped yields 6 – 8 servings.

Smother each serving with some reserved sauce for added flavour.

The first thing I did was place gluten free soda crackers inside a large Ziploc bag and then I used a rolling pin to crush the crackers into fine crumbs until I had 1 cup.

Next I put some lean ground beef, large eggs, onion, salsa verde, pepper, salt and the crushed crackers into a large mixing bowl.

I mixed all the ingredients together well.

I used four small loaf pans.  Two pans were Instant Pot Brand and the other two were from a kit from Amazon.

Next I firmly pressed the meat mixture into each of the four loaf pans.

Then I arranged the pans on one of the racks from my Deluxe Air Fryer and placed it on the bottom rung.

I used the Custom Setting to set the Air Fryer to 375F for 20 minutes.

While the meatloaf was cooking I prepared the sauce by combining some salsa verde with some bbq sauce.

After the meatloaf had cooked for 20 minutes I removed the tray from the Air Fryer. 

Then I spooned half of the sauce over the tops.

Next I returned the tray to the Air Fryer and again used the custom setting at 375F for 10 minutes.

After 10 minutes I removed the tray and transferred the two smaller pans to a hot pad and returned the two larger pans (Instant Pot brand) to the Air Fryer on Custom Setting 375F for 8 more minutes.

I removed the smaller loaves from the pans while the other two pans finished cooking.

Then I sliced the meatloaf and served it up with some of our favourite sides.

Have the reserved sauce on hand for those who want to top off their serving.

Ingredients You’ll Need to Make this Air Fryer Meatloaf Salsa Verde:

  • 1 yellow onion chopped
  • 3/4 cup salsa verde
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • Sauce:
  • 1/2 cup salsa verde
  • 1/2 cup bbq sauce of choice

How to Make Air Fryer Meatloaf Salsa Verde:

  1. Put some gluten free soda crackers into a Ziploc bag and use a rolling pin to crush them into fine crumbs. Enough for 1 cup.
  2. In a large mixing bowl blend the ground beef, cracker crumbs, eggs, yellow onion, salsa verde, salt and pepper. After initially mixing with a large spoon you will need to finish combining with your hands.
  3. Firmly pack the ground beef mixture into 4 mini loaf pans.  I used two Instant Pot Brand and 2 from an Amazon kit.
  4. Place them on the Air Fryer rack on the bottom and use the Custom Setting to cook at 375F for 20 minutes.
  5. Prepare the sauce by mixing the salsa verde and the bbq sauce in a small bowl.
  6. After 20 minutes remove the tray from the Air Fryer and spoon half of the sauce over the tops.
  7. Return the tray to the Air Fryer and again set Custom Setting to 375F for 10 minutes.
  8. After 10 minutes remove tray from Air Fryer.  The two smaller pans will be cooked and can be removed. The Instant Pot brand were larger and I returned them to cook on Cutom Setting 375F for 8 more minutes.
  9. I removed the smaller loaves from the pans and sliced them up.
  10. Serve with your favourite sides.
  11. Have the reserved sauce available for people to use on their serving if desired.
