Instant Pot Fancy Meatloaf – Gluten Free

Instant Pot Fancy Meatloaf, draped in sauce, will dress up any dinner table.  This gluten free version has a ribbon of spicy cheese through its center that spices it up a bit!

Making savoury dishes in the Instant Pot bundt pan can take an every day meatloaf and make it look like a menu item for a formal dinner!

Whether you leave it plain, or top it off with the suggested sauce, this easy pressure cooker recipe can serve 8 people.

In our family we like a bit of heat so I added a ribbon of grated mozzarella cheese with jalapeños and red chiles.

Instant Pot Fancy Meatloaf is a very quick and easy main course that is loaded with flavour.

To begin I placed 2 pounds of lean ground beef into a large mixing bowl.

Then I dumped in some gluten free bread crumbs, diced yellow onion, salsa of choice, eggs, almond milk, gluten free taco seasoning mix, dried parsley, dried basil, salt and pepper.

I started blending all the ingredients with a rubber spatula.

To make sure all the ingredients were well combined I finished the mixing process with my hands to form a big meat patty.

Then I greased an Instant Pot bundt pan and packed half of the meat mixture into it.  I created a little hollow in the meat.

Then I pressed one cup of grated mozzarella cheese with jalapeños and red chiles into the hollow I had created.  

I packed the remaining meat mixture in on top of the cheese. Before placing the pan in the Instant Pot I covered it with tinfoil that I had sprayed with cooking spray.  

I made a hole in the tinfoil over the hole in the bundt pan to let steam escape.

Next I poured 1 1/2 cups of water into the Instant Pot and placed the trivet inside. I lowered the bundt pan onto the trivet.

Then I placed the lid on the Instant Pot, turned the steam release handle to the sealing position and set the Instant Pot to Pressure Cook High for 30 minutes.

While the meatloaf was cooking I prepared the sauce by pouring some salsa of choice, some bbq sauce of choice and some pure maple syrup into a small bowl.

I stirred them all together well. You could heat the sauce up a bit in the microwave or leave it as is.

Once the Instant Pot was done cooking, I allowed it to do a Natural Release for 10 minutes before turning the steam release handle to the venting position.

Then I carefully removed the trivet and bundt pan.  I removed the tinfoil and tilted the pan to pour off any grease.

After checking for grease I immediatley inverted the meatloaf onto a serving dish.

I spooned some of the sauce over the loaf and reserved the rest for individual servings.

Ingredients You’ll Need to Make this Instant Pot Fancy Meatloaf:

  • 2 lbs lean ground beef

  • 1 cup salsa of your choice
  • 2 eggs, large
  • 1/2 cup almond milk
  • 2 tbsp gluten free taco seasoning
  • 1 tbsp dried parsley

  • 1 1/2 tsp pepper
  • 1 cup grated mozzarella cheese with jalapeños and red chiles
    After Cooking
    Sauce:

How to Make Instant Pot Fancy Meatloaf:

  1. Spray an Instant Pot 6 cup bundt pan with cooking spray.
  2. Mix all the ingredients except for the grated cheese in a large mixing bowl. You will have to use your hands to make sure everything is combined.
  3. Put about half of the meat mixture into the bundt pan and pack it down well. Create a hollow in the centre of the meat for the grated cheese.
  4. Press the grated cheese into the hollow in the meat.
  5. Top with remaining meat packed in well.
  6. Cover with tinfoil that has been sprayed with cooking spray.
  7. Punch a hole in the tinfoil over the hole in the bundt pan to allow steam to escape.
  8. Pour 1 1/2 cups of water into the Instant Pot.
  9. Place trivet in Pot and set bundt pan on top of it.
  10. Place the lid on the Instant Pot, turn the steam release handle to the sealing position and set the Instant Pot to Pressure Cook High for 30 minutes.
  11. While the meatloaf is cooking prepare the sauce by combining the salsa, bbq sauce of choice and pure maple syrup in a small bowl.
  12. Once the Instant Pot is done cooking, allow it to do a Natural Release for 10 minutes before turning the steam release handle to the venting position.
  13. Remove lid and carefully lift out trivet and bundt pan.
  14. Remove tinfoil. Tip pan to drain any fat.
  15. Invert meatloaf onto serving dish.
  16. Heat sauce in microwave for a minute or leave at room temperature.
  17. Pour sauce by spoonfuls over the meatloaf.
  18. Reserve most of sauce for spooning over each slice when serving.
  19. Slice and enjoy!
