Almond Flour Oatmeal Cookies

Almond Flour Oatmeal Cookies are an irresistible treat.  This gluten free version of a tried and true cookie flavour is sure to be a hit in your home.

The base for these delicious cookies is almond flour, rolled oats and oat flour.

Every time I buy a bag of gluten free oats I make up a small batch of oat flour to have on hand for recipes like this one.

This gluten free dessert recipe yields 40 cookies when using a one tablespoon scoop.

These cookies travel well and could be packed in lunches or added to any dessert tray.

The almond flour creates a slightly chewy texture.

The first thing I did to make Almond Flour Oatmeal Cookies, was dump some vegetable oil, brown sugar and granulated sugar into a large mixing bowl.

I stirred the ingredients together with a large wooden spoon before adding in some large eggs and vanilla extract.

After stirring in the eggs and vanilla I measured in some gluten free rolled oats, oat flour (I made my own from the rolled oats), ground cinnamon, baking soda and salt.

I again stirred with a wooden spoon and once those ingredients were well combined I measured in some almond flour.

Using the spoon again I stirred until the almond flour was well incorporated into the cookie dough.

Once the batter was ready I used a 1 tablespoon scoop to drop balls onto a parchment paper lined cookie sheet.

These cookies spread so be sure to leave 2″ between them.

I baked them in a 350F oven for 10-12 minutes or until golden brown.  

Sometimes for variety, I add some chocolate chips or raisins to the last half of the batter.

Once baked, I allowed them to cool on the pan for a few minutes before transferring them to a cooling rack.

I let them completely cool on the cooling rack.

When cooled Almond Flour Oatmeal Cookies provide a great snack any time of the day.

They are loaded with rolled oats and almond flour giving them a crunchy exterior and chewy center.

Ingredients You’ll Need to Make these Almond Flour Oatmeal Cookies:

  • 1/3 cup vegetable oil
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 eggs, large
  • 1 tsp vanilla extract
  • 1 1/2 cups gluten free rolled oats
  • 1/2 cup oat flour
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon – optional
  • 1/2 tsp salt
  • 1 cup almond flour
  • 1 cup chocolate chips or raisins – optional

How to Make Almond Flour Oatmeal Cookies:

  1. Preheat oven to 350F.
  2. Line a baking sheet with parchment paper.
  3. Stir the vegetable oil, brown sugar and granulated sugar together in a large mixing bowl until combined.
  4. Add the eggs and vanilla to the mixing bowl and again stir until completely incorporated.
  5. Measure the rolled oats, oat flour, baking soda, salt and ground cinnamon(if using) into the mixing bowl and stir to combine.  I make my own oat flour by blending some of the oats when I buy them.
  6. Add the almond flour and stir until it is completely incorporated.
  7. You could also fold in some chocolate chips or raisins at this time if you choose.  Sometimes I make half the batter plain and then add one of them to the last half so I have a variety.
  8. Use a scoop or tablespoon to drop balls of dough onto a parchment lined baking sheet. These cookies spread so leave 2″ between each one.
  9. Place in the preheated oven and bake for 8 -10 minutes.
  10. Remove from oven when edges are turning brown.
  11. Allow to cool for a few minutes on the baking sheet before transferring them to a cooling rack.
  12. Enjoy!
