Gluten Free Chicken Parmesan

Gluten Free Chicken Parmesan is a delicious chicken recipe that can be served with or without a healthy serving of pasta.

Baked in marinara sauce and covered in cheeses this casserole will not disappoint.

This recipe will yield 4 servings of chicken parmesan.

We usually eat ours over pasta, but you can serve yours with your favourite sides.

To make this Gluten Free Chicken Parmesan I cut two chicken breasts in half so the pieces of meat were thin.

Then I dabbed the chicken with some paper towel.

Next I placed some gluten free Breton herb and garlic crackers in a ziploc bag.

I crushed the crackers.

Then I placed some gluten free flour, a pinch of salt and pepper into a tin pie plate.  In another tin plate I beat a large egg.

In a third tin pie plate I mixed together the crushed crackers, some panko bread crumbs and 1/4 cup of shredded parmesan. 

To the crumbs I added a bit of cut up fresh parsley.

Now it was time to dredge the chicken pieces.  First I coated the chicken with the flour.

Then I covered the chicken with the beaten egg.

The last step is to coat each piece of chicken with the crumb mixture.

Heat some olive oil in a large skillet over medium/high heat. 

When oil is heated add the coated chicken pieces.

Cook chicken about 2 minutes per side.

Then I spread half of the marinara sauce in a 9″ x 13″ baking pan.

Next I placed the chicken pieces in a sinlge layer in the baking pan.

Then I shredded some mozzarella cheese.

Before sprinkling on the mozzarella cheese I first spooned the rest of the marinara sauce on top of each piece of chicken.

Then I sprinkled on the remainder of the parmesan cheese.

I placed the baking pan into a preheated 425F oven for 20 – 25 minutes or until the chicken reached an internal temperature of 165F.

After baking I removed the casserole from the oven.

Gluten Free Chicken Parmesan is a delicious way to serve up some chicken breasts.

  3. Cut the chicken breasts in half so they are thin.  You can then pound them if you prefer but I did not.
  4. Put the flour in a tin plate.
  5. Crack the egg into another tin plate.
  6. Place the Breton crackers (about 12) into a ziploc bag and crush them.
  7. In another tin plate mix the bread crumbs, crushed crackers, 1/4 cup of the parmesan cheese and the chopped parsley.
  8. Dab the cut chicken breasts with paper towel.
  9. Dredge the chicken breast pieces in the flour, then the egg, finishing with the bread crumb mixture.
  10. Place the chicken breast pieces in the heated oil.  Cook about 2 minutes per side.
  11. Spread half of the marinara sauce in a 9″ x 13″ baking dish.
  12. Place the chicken breast pieces on top of the pasta sauce.
  13. Top each piece of chicken with about 2 tbsp of marinara sauce.
  14. Sprinkle the shredded mozzarella cheese on top of the chicken.
  15. Sprinkle the remaining parmesan cheese on top of the mozzarella.
  16. Bake in the preheated 425F oven for 20 – 25 minutes or until chicken is 165F.
  17. Remove from oven.
  18. Serve on its own or over pasta.  Garnish with fresh parsley if desired.
