Gluten Free Chicken Parmesan is a delicious chicken recipe that can be served with or without a healthy serving of pasta.
Baked in marinara sauce and covered in cheeses this casserole will not disappoint.
This recipe will yield 4 servings of chicken parmesan.
We usually eat ours over pasta, but you can serve yours with your favourite sides.

To make this Gluten Free Chicken Parmesan I cut two chicken breasts in half so the pieces of meat were thin.
Then I dabbed the chicken with some paper towel.
Next I placed some gluten free Breton herb and garlic crackers in a ziploc bag.
I crushed the crackers.
Then I placed some gluten free flour, a pinch of salt and pepper into a tin pie plate. In another tin plate I beat a large egg.
In a third tin pie plate I mixed together the crushed crackers, some panko bread crumbs and 1/4 cup of shredded parmesan.
To the crumbs I added a bit of cut up fresh parsley.
Now it was time to dredge the chicken pieces. First I coated the chicken with the flour.
Then I covered the chicken with the beaten egg.
The last step is to coat each piece of chicken with the crumb mixture.
Heat some olive oil in a large skillet over medium/high heat.
When oil is heated add the coated chicken pieces.
Cook chicken about 2 minutes per side.
Then I spread half of the marinara sauce in a 9″ x 13″ baking pan.
Next I placed the chicken pieces in a sinlge layer in the baking pan.
Then I shredded some mozzarella cheese.
Before sprinkling on the mozzarella cheese I first spooned the rest of the marinara sauce on top of each piece of chicken.
Then I sprinkled on the remainder of the parmesan cheese.
I placed the baking pan into a preheated 425F oven for 20 – 25 minutes or until the chicken reached an internal temperature of 165F.
After baking I removed the casserole from the oven.

- Place the Breton crackers (about 12) into a ziploc bag and crush them.
- In another tin plate mix the bread crumbs, crushed crackers, 1/4 cup of the parmesan cheese and the chopped parsley.
- Dab the cut chicken breasts with paper towel.
- Dredge the chicken breast pieces in the flour, then the egg, finishing with the bread crumb mixture.
- Place the chicken breast pieces in the heated oil. Cook about 2 minutes per side.
- Spread half of the marinara sauce in a 9″ x 13″ baking dish.
- Place the chicken breast pieces on top of the pasta sauce.
- Top each piece of chicken with about 2 tbsp of marinara sauce.
- Sprinkle the shredded mozzarella cheese on top of the chicken.
- Sprinkle the remaining parmesan cheese on top of the mozzarella.
- Bake in the preheated 425F oven for 20 – 25 minutes or until chicken is 165F.
- Remove from oven.
