Hobo Casserole Mexican Style

Another tasty variation of Hobo Casserole, is a spice upped version called Hobo Casserole Mexican Style. Loaded with ground beef, beans, rice, cheese and salsa it is a complete meal in one pan!

This hearty, layered dinner casserole is naturally gluten free and is loaded with flavour.

Every mouthful is loaded with layers of goodness.  Ground beef, refried beans, black beans, salsa, rice, cheese and salsa make it a taste explosion in every bite!

To begin making Hobo Casserole I dumped some lean ground beef into a mixing bowl.

Then I added some refried beans with mild green chilies and some Southwest-Style Black Bean and Corn Salsa.

After stirring those ingredients together I pressed the lean ground beef mixture into the bottom of a 9″ x 13″ baking pan to form the base of the casserole..

Then I rinsed and strained a can of black beans.

I mixed the beans with more refried beans and salsa.

Next I spread this mixture over top of the ground beef in the baking pan.

Then I spread some cooked basmati rice on top of the refried bean mixture.  I used about two cups of cooked rice but you could use more if you like.

Then I covered the rice with slices of Monteray Jack Jalapeño cheese.

Before covering it to bake in the oven I spread more salsa over top of the cheese slices.

Then I covered the casserole and baked it for 75 minutes in a preheated 350F oven.

After 75 minutes I removed the cover and continued cooking the casserole for 15 more minutes.

After the extra 15 minutes I removed the casserole from the oven and covered it with corn chips.

I returned the casserole to the oven, uncovered for another 5 to 10 minutes after adding the corn chips.

After removing the Hobo Casserole Mexican Style from the oven I allowed it to sit for a couple of minutes before cutting it into squares.

Serve this delicious casserole with  your favourite salad on the side.

Hobo Casserole Mexican Style is a quick and easy variation of regular Hobo Casserole that will spice up your dinner any night of the week.

Layers of beef, beans, rice, salsa and corn chips will delight your taste buds.  

Extra salsa can be spooned over top for those that want their serving topped up.  Reserve some of the corn chips for those that want extra as well if you prefer.

Ingredients You’ll Need to Make this Hobo Casserole Mexican Style:

  • 2 lbs lean ground beef
  • 14 oz can refried beans with mild green chilies (divided)

  • 19 oz can black beans
  • 6 or 7 slices Monteray Jack Jalapeno cheese

How to Make Hobo Casserole Mexican Style:

  1. Preheat oven to 350F. 
  2. Prepare the base of the casserole by dumping the ground beef into a mixing bowl.  Add half the can of refried beans and 2/3 cups of the salsa. Combine.
  3. Press the lean ground beef mixture into the bottom of a 9″ x 13″ baking pan.
  4. Rinse and drain the can of black beans.
  5. Mix the black beans with remaining refried beans and 1 cup of the salsa.
  6. Spread the bean and salsa mixture over top of the ground beef.
  7. Spread the cooked rice over top of the bean and salsa mixture.  You can use more rice if desired.
  8. Cover the rice with the cheese slices.
  9. Pour the remaining 2 cups of salsa over top of the cheese slices.
  10. Cover and place in the preheated 350F oven for 75 minutes.
  11. Uncover and cook for another 15 minutes.
  12. Remove from oven and sprinkle corn chips on top of the casserole.  Reserve some chips if you want to add extra to each serving.
  13. Return to the oven for 5 to 10 minutes.
  14. Remove from oven.  Allow to sit for a few minutes before serving.
  15. Serve and spoon extra salsa over top and some reserved corn chips if desired.
  16. Enjoy!
