To begin making Rhubarb Banana Bread I diced some rhubarb.

Next I softened some butter in the microwave on low heat.

Then I added some granulated sugar and the softened butter to a large mixing bowl.

After creaming together the butter and sugar, I stirred in 2 large eggs and some vanilla extract.

Then I stirred in some mashed banana.

Next I measured in Bob's Red Mill 1 to 1 Gluten Free Baking Flour, baking soda, salt and cinnamon.

Once the ingredients were well combined I folded in the diced rhubarb.

I then greased 9" x 5" loaf pan.

Next  I scraped the batter into the prepared pan and spread it out evenly.

Then I put the loaf pan in the preheated 350F oven to bake or 50 - 60 minutes or until a toothpick inserted in the center came out clean.

After removing the loaf from the oven I allowed it to cool in the pan for about 10 minutes.

Then I turned the Rhubarb Banana Bread out onto a cooling rack to finish cooling.
