Skor Butter Tarts – Gluten Free

Skor Butter Tarts are a tasty variation of regular butter tarts.  This gluten free dessert pastry will be a hit with young and old alike.

Chocolately goodness wrapped in a light and flaky gluten free pastry give this treat a melt in your mouth texture.

Load up each tart with SKOR Toffee Bits before and after baking for added flavour.

Bake to your desired doneness.  My oven always produces a variety of firm and runny due to hot spots.  So everybody’s tastes are satisfied.

To begin making Skor Buttertarts I prepared my Gluten Free Pastry.  I made double the recipe to have enough 4″ tart shells.  There was some pastry left over for a single crust pie.

You could also used premade gluten free tart shells.

I used a 4″ inch cookie cutter and then carefully placed the pastry into an ungreased silicone muffin pan.

I like to use silicone for tarts because it makes it easier to get the tarts out after they have cooled.  You can pop them up from the bottom.

Then I melted some Buzz in the microwave and added it to a mixing bowl with some brown sugar, and Golden Flavour Crisco Shortening

Buzz is a new product that I was gifted for Christmas.  Be sure to check it out!

In place of Buzz you could add another 1/2 cup of brown sugar and 1/4 cup of cocoa powder.

I creamed the ingredients together with a large wooden spoon.

Next I added two large eggs and measured in some corn syrup, vanilla extract and a bit of salt.

I used the large wooden spoon again to combine all the ingredients until well blended and smooth. 

Then I scooped the tart batter into the prepared tart shells, filling each about 3/4 full.

Next I sprinkled some SKOR Toffee Bits into each tart so the bits would melt into the batter when baking.  

Then I put the silicone muffin pan into a preheated 425F oven for 13 – 15 minutes or until the tarts looked set.

After removing the Skor Butter Tarts from the oven I allowed them to cool for a few minutes and then I sprinkled more SKOR Toffee Bits on top.  Use as many as you like for this step.

Then I allowed the tarts to cool completely in the pan before carefully removing them.  The pastry is light and flaky so it is very important to make sure they are completely cooled.

Skor Butter Tarts are a little taste of heaven and are a sweet treat to finish off any meal.

Ingredients You’ll Need to Make these Skor Butter Tarts:

  • Gluten Free Pastry for 24 tarts
  • 1/2 cup Buzz (or 1/2 cup brown sugar and 1/4 cup cocoa)

  2. Prepare pastry according to recipe directions or use premade tart shells. I cut my pastry into 4″ circles. Place pastry in a muffin tin. I used silicone.
  3. Melt the Buzz in the microwave.
  4. Dump the brown sugar, melted Buzz and the Golden Flavour Crisco into a mixing bowl. Stir to combine.
  5. Add the eggs, vanilla, salt and corn syrup to the mixing bowl. Stir until well combined.
  6. Scoop batter into the prepared tart shells filling about 3/4 full.
  7. Sprinkle half of the SKOR Toffee Bits into each tart.
  8. Bake in the preheated 425F oven for 13 – 15 minutes or until set.
  9. Remove from oven and allow to cool for a couple of minutes.
  10. Sprinkle the remaining SKOR Toffee Bits into each tart.
  11. Allow to cool completely before removing from the muffin pan.
  12. When cooled carefully remove. The silicone makes it easier to remove them because you can pop them out.
  13. Serve and enjoy!

*If using this Gluten Free Pastry recipe you will need to double it and will then have some pastry left for maybe a single crust pie if making 4" tarts.
