To start making Strawberry Banana Muffins I dumped some granulated sugar and margarine into a large mixing bowl.

I used an electric hand mixer to beat the ingredients together well.

Then I beat in 2 large eggs, vanilla extract and some mashed strawberries until the batter was light and fluffy.

Next I measured in some Bob’s Red Red Mill 1 to 1 Gluten Free Baking Flour that I had sifted and spooned into the measuring cup.

I also measured in a bit of mashed banana, baking soda and salt.

Then I used the electric hand mixer again to beat just until blended.

I sprayed a muffin pan with cooking spray and then filled it 3/4 full before placing the pan in a preheated 350F oven.

After 20 minutes, or when a toothpick inserted in the center came out clean I removed the pan from the oven.

I let the Strawberry Banana Muffins cool in the pan for about 10 minutes before flipping them on their sides to continue cooling.

Strawberry Banana Muffins are a tasty gluten free snack to enjoy any time of the day!

Boost the strawberry flavour by adding some strawberry jam.
