Strawberry Banana Muffins - Gluten Free

Strawberry Banana Muffins add a little taste of summer to the traditional banana muffin.  These gluten free muffins make a great snack or breakfast on the run.

These moist, tasty muffins are loaded with mashed strawberries and banana.  

Whether you eat them plain or add a dollop of strawberry jam you will enjoy this gluten free snack.

To start making Strawberry Banana Muffins I dumped some granulated sugar and margarine into a large mixing bowl.

I used an electric hand mixer to beat the ingredients together well. 

Then I beat in 2 large eggs, vanilla extract and some mashed strawberries until the batter was light and fluffy. 

Next I measured in some Bob's Red Red Mill 1 to 1 Gluten Free Baking Flour that I had sifted and spooned into the measuring cup.

I also measured in a bit of mashed banana, baking soda and salt.

Then I used the electric hand mixer again to beat just until blended.

I sprayed a muffin pan with cooking spray and then filled it ¾ full before placing the pan in a preheated 350F oven.

After 20 minutes, or when a toothpick inserted in the center came out clean I removed the pan from the oven.

I let the Strawberry Banana Muffins cool in the pan for about 10 minutes before flipping them on their sides to continue cooling.

Strawberry Banana Muffins are a tasty gluten free snack to enjoy any time of the day!

Ingredients You'll Need to Make these Strawberry Banana Muffins:

  • ½ cup sugar
  • ½ cup margarine

  • ¾ cup mashed strawberries
  • 1 teaspoon vanilla extract
  • 1 ¾ cups Bob's Red Mill 1 to 1 Gluten Free Baking Flour sifted
  • ½ cup mashed banana
  • 1 teaspoon baking soda
  • ½ teaspoon salt

How to Make Strawberry Banana Muffins:

  1. Preheat oven to 350F and spray a muffin pan with cooking spray.
  2. Add granulated sugar and margarine to a large mixing bowl. Beat ingredients with an electric hand mixer.
  3. Add the eggs, vanilla extract and the mashed strawberries. Use the electric hand mixer to beat again.
  4. Measure in the sifted Bob's Red Mill 1 to 1 Gluten Free Baking Flour. I spoon it into the measuring cup so it does not become packed.
  5. Add the mashed banana, baking soda and salt. Beat until just combined.
  6. Scoop batter into the prepared muffin pan and fill ¾ full.
  7. Bake for 20- 25 minutes in the preheated 350F oven or until a toothpick inserted in the center comes out clean.
  8. Remove from oven and allow to cool in pan for about 10 minutes.
  9. After 10 minutes flip onto their sides or remove to cooling rack to finsih cooling.
  10. Serve and enjoy plain or add some strawberry jam!
