This quick and easy recipe is a hit and our home and I am sure your family will love it too.

To make these tasty Grilled Pizza Sandwiches I started by laying out 8 pieces of gluten free bread on a baking sheet.

I spread margarine over each piece, making sure to get to the edges.

For sandwiches I like to use little Northern Bakehouse bread.  It is nice to finally have large slices of gluten free bread!

After spreading the margarine I flipped the slices of bread over and sprinkled shredded mozzarella over 4 of the slices.

You could also use slices of mozzarella.

Then I covered the cheese with some pizza toppings.  I chose to use sliced pepperoni, diced ham, sliced red pepper, and bacon bits.

The toppings can be adjusted to suit your own taste buds.  Have a variety of toppings available and let each person create their own!

I sprinkled more shredded mozzarella over the other ingredients.

Then I covered the pizza toppings with the other slice of bread making sure to have the margarine side up.

I set my waffle iron for the darkest setting and when it was heated I placed one sandwich on it.  

You may have a larger waffle iron and be able to cook more than one at a time.

While the sandwich was cooking I heated up some pasta sauce in the microwave to use for dipping.  You could use pizza sauce if you have some.

Once the green light came on I opened the waffle iron and removed the sandwich.

I sliced it and placed it on a serving plate.

Then I served it with some of the heated pizza sauce.

These Waffled Grilled Pizza Sandwiches were quickly devoured in our house and we will be making them again soon!

  • 8 slices gluten free bread
  • 1/4 cup margarine
  • 2 cups grated mozzarella or 8 slices mozzarella
  • 16 slices pepperoni
  • 1 slice cooked ham diced
  • 1/4 red pepper sliced
  • 1/4 cup bacon bits

How to Make Waffled Grilled Pizza Sandwiches:

  1. Preheat waffle iron.
  2. Spread margarine over each slice of bread.
  3. Flip bread over and cover 4 slices of bread with half the grated mozzarella cheese or 4 slices of mozzarella.
  4. Divide the slices of pepperoni, diced ham, sliced red pepper and bacon bits between the pieces of bread with the cheese.
  5. Cover the pizza ingredients with the remainder of the cheese.
  6. Cover with the other slices of bread.
  7. Place on the preheated waffle iron and cook until browned.
  8. Remove from waffle iron.
  9. Heat some pasta or pizza sauce in the microwave for dipping.
  10. Serve and enjoy!
