To begin making these grilled sandwiches I preheated a frying pan and sprayed it with cooking spray before breaking 4 eggs into the pan.

I had just purchased some egg rings and decided to try them out but they are not necessary for this recipe.

I pierced each yolk with a toothpick to spread it out.

While the eggs were cooking I spread margarine over eight slices of gluten free bread.

I recently discovered "the Little Northern Bakehouse" bread.  I love that it has loaves with full size slices.

Then I dumped some Tex Mex shredded cheese and some chunky salsa into a medium mixing bowl.

I used a spoon to blend the two ingredients together.

After stirring I flipped the pieces of bread over, so the margarine side was now down, and spread half of the cheese mixture over four of the pieces of bread.

Then I placed a piece of sliced ham on top of the cheese mixture.

Next I flipped the eggs over and allowed them to finish cooking for a minute.

When the eggs were fully cooked I placed one on each of the slices of ham.

After adding the eggs I then covered each egg with the remainder of the cheese mixture.

Another layer of the cheese mixture.

Then I placed the sandwiches in a preheated frying pan over medium heat.

When the bottom slices of bread were nicely browned I flipped the sandwiches to brown the remaining side.

Once desired doneness was reached I removed the sandwiches from the pan to a serving plate.  Slice and enjoy!

Grilled Tex Mex Breakfast Sandwiches can be enjoyed at any time of the day.  For breakfast or lunch they may be a full meal on their own but for dinner you may want to add a side of fries to satisfy some larger appetites.
