Spicy Waffled Grilled Cheese with Bacon – Gluten Free

Spicy Waffled Grilled Cheese will heat up any occasion!  Serve with a bit of spicy sweet chili Thai sauce.  Or for the more conservative guests, have some ketchup ready for dipping.

To make these tasty Spicy Waffled Grilled Cheese Sandwiches I started by laying out 8 pieces of gluten free bread on a baking sheet.

I spread margarine over each piece, making sure to get to the edges.

For sandwiches I like to use little Northern Bakehouse bread.  It is nice to finally have large slices of gluten free bread!

Next I sliced up spicy mozzarella cheese.  The cheese was loaded with jalapeños and red chilies.

I flipped the slices of bread over so the margarine side was down and placed a layer of cheese on four of the slices of bread.

I cooked some bacon in the microwave and layered the pieces over the spicy mozzarella.

Then I used the remaining cheese to cover the slices of bacon.

Next I topped the cheese with the other slices of bread making sure that the side with margarine was up.

I placed the sandwich onto a heated waffle iron that I had turned to the dark setting.  I could only cook one at a time in my Belgian waffle iron.

After a few minutes the waffled sandwich was done.

  • 8 slices gluten free bread
  • 1/3 cup margarine
  • 1/2 pound mozzarella with jalapeno and red chilies
  • 10 slices cooked bacon
    Dipping Sauce:
  • Sweet Chili Thai Sauce
  • Ketchup

How to Make Spicy Waffled Grilled Cheese with Bacon:

  1. Preheat waffle iron.
  2. If you have no cooked bacon microwave 10 slices.
  3. Spread margarine over each slice of bread.
  4. Flip bread over and cover 4 slices of bread with half the sliced, spicy mozzarella cheese.
  5. Divide the slices of cooked bacon on top of the pieces of bread with the cheese.
  6. Cover the bacon with the remainder of the cheese.
  7. Cover with the other slices of bread. Margarine side should be up.
  8. Place on the preheated waffle iron and cook until browned.
  9. Remove from waffle iron.
  10. Provide ketchup or sweet chili Thai sauce for dipping.
  11. Serve and enjoy!

Delicious recipe!!! Unfortunately we can’t get that cheese in Norway so we used 10% cheese slices with diced jalapeños and roasted red peppers! This is my new favourite go to comfort food!!! ***
