The first step to making Cinnamon Coffee Cake was to soften some butter in the microwave on low power.

I added the softened butter to some brown sugar in a mixing bowl.  I creamed the two ingredients together.

Then I beat in two eggs.

Next I measured in some Bob’s Red Mill Gluten Free Baking Flour, baking powder and salt.  I stirred the ingredients together well.

I sprayed an 8″ square baking pan with cooking spray.

Then I scraped the batter into the prepared baking pan and spread it out evenly.

Next I mixed together the ground cinnamon and the granulated sugar.

Once mixed I spooned the cinnamon mixture on top of the cake batter.

Then I used a knife to swirl the cinnamon mixture into the cake batter.

Next I put the pan in the preheated 350F oven to bake for 25 – 30 minutes or until a toothpick inserted in the center came out clean.

After removing the coffee cake from the oven I allowed it to cool in the pan.

Once cooled I cut the Cinnamon Coffee Cake into squares before serving.
