Mandarin Cake – Gluten Free

Gluten Free Mandarin Cake is a very quick and easy recipe to make. Loaded with mandarin oranges it is a nice burst of citrus any time of the year.

This flavourful dessert is smothered in sauce after baking and then carmelized under the broiler.

This nice light dessert yields 9 servings.

You can dress up Mandarain Orange cake with some whipped cream or some ice cream if you choose.

Serve it for afternoon tea or it is a great recipe choice for after a heavier dinner.

To begin making Mandarin Cake I dumped some Bob’s Red Mill 1 to 1 Gluten Free Baking Flour and some granulated sugar into a medium size mixing bowl.

After stirring them together I added 2 large eggs, baking soda, salt and the juice from one tin of mandarin oranges.

I stirred the ingredients together until they were well blended.

Next I dumped in the mandarin orange segments.

I stirred until they were incorporated into the cake batter.

Then I greased a square cake pan and scraped the cake batter into it.

Once all the batter was scraped into the pan I placed it in a preheated 350F oven for 30 – 35 minutes or until a toothpick inserted in the center came out clean.

When there was about 10 minutes left in the baking time I started to prepare the sauce on top of the stove.  I turned a burner to medium/low heat and placed brown sugar, margarine and almond milk into a small pot.

I stirred the contents of the pot until they had all blended together and warmed.

When I pulled the cake out of the oven I turned the oven to broil.  

Then I poured the heated sauce over top of the cake.

I returned it to the oven under the broiler for between 30 and 60 seconds.  After removing it from the oven I allowed it to cool for about 15 minutes.

Then I cut the warm Mandarin Cake into serving size pieces.

Eat it plain or top it off with a dollop of whipped cream or ice cream.

Ingredients

  • 1 1/4 cup Bob's Red Mill 1 to 1 Gluten Free Baking Flour
  • 3/4 cup granulated sugar
  • 2 eggs, large
  • 1 tsp baking soda
  • 1/2 tsp salt
  • Juice of can of mandarin oranges
  • Mandarin oranges
  • Sauce:
  • 2/3 cup brown sugar
  • 3 tbsp almond milk
  • 3 tbsp margarine

Instructions

    1. Preheat oven to 350F and grease an 8"x 8" baking pan.
    2. In a medium size mixing bowl combine the Bob's Red Mill 1 to 1 Gluten Free Baking Flour and granulated sugar.
    3. Add the eggs, baking soda, salt and the juice from the tin of mandarins. Stir to combine.
    4. Stir in the mandarins.
    5. Scrape into the prepared baking pan.
    6. Place in the preheated 350F oven for 30-35 minutes or until a toothpick inserted in the center comes out clean.
    7. During last 10 minutes of baking time prepare the sauce over medium low heat on the stove top.
    8. Combine the brown sugar, margarine and almond milk. Heat until blended.
    9. Remove cake from oven and turn oven to broil.
    10. Pour sauce over the cake and put it under the broiler for 30 seconds to 1 minute.
    11. Remove from oven and allow to cool for about 15 minutes.
    12. Serve directly from pan. If not serving right away reheat separate pieces in the microwave.
    13. Serve warm with ice cream or whipped topping.
