Citrus Bites - Gluten Free

Gluten Free Citrus Bites are the perfect size for a quick little snack.  These little bites of sunshine are a quick and easy dessert that will be enjoyed by young and old alike.  

Enjoy the burst of citrus flavour in these light and fluffy cake bites loaded with orange and lemon. 

Eat these little tidbits plain or dust them with icing sugar to dress them up a bit!

This easy recipe makes 14 Citrus Bites but can easily be cut in half if you only have one silicone egg bite mold.

To begin making Citrus Bites I dumped brown sugar, melted margarine, orange juice, lemon juice, almond milk, orange zest, lemon zest and one large egg into a large mixing bowl.

I used a wire whisk to beat these ingredients together.

Then I added in some Bob's Red Mill 1 to 1 Gluten Free Baking Flour that I had sifted and spooned into the measuring cup.  I do this to make sure I do not use more flour than needed.

I also measured in some baking powder and some salt.

Next I used the wire whisk again to incorporate all the dry ingredients.

Then I placed my two silicone egg bite molds onto a cookie sheet and sprayed them with cooking spray.

I carefully scooped the batter into the molds filling them about ¾ full.

I placed the cookie sheet in a preheated 350F oven for 15 - 20 minutes or until a toothpick inserted in the center of the Citrus Bites came out clean.

After allowing the Citrus Bites to cool in the molds for about 10 minutes I inverted them onto a cooling rack.

When they were completely cooled I dusted them with icing sugar.

Citrus Bites are a nice, easy dessert.  Perfect after a big meal because of their light fluffy texture and small size!

Ingredients You'll Need to Make these Citrus Bites:

  • ⅔ cup brown sugar
  • ⅔ cup melted margarine
  • ⅓ cup orange juice
  • ⅓ cup lemon juice
  • ⅓ cup almond milk
  • 1 egg, large
  • 2 tablespoon orange zest
  • 2 tablespoon lemon zest
  • 2 cups sifted Bob's Red Mill 1 to 1 Gluten Free Baking Flour
  • 3 teaspoon baking powder
  • ½ teaspoon salt
    After Baking:
  • Icing sugar for dusting

How to Make Citrus Bites:

  1. Preheat oven to 350F.
  2. Spray two egg bite molds with cooking spray. Recipe can easily be cut in half if you only have one mold.
  3. Dump the brown sugar, melted margarine, orange juice, lemon juice, orange zest, lemon zest, egg and almond milk into a large mixing bowl.
  4. Beat together with a wire whisk.
  5. Sift the Bob's Red Mill 1 to 1 Gluten Free Baking Flour and spoon it into a measuring cup. Pour into the mixing bowl.
  6. Measure in the baking powder and salt. Whisk together just until combined.
  7. Fill the egg bite molds ¾ full.
  8. Place mold on a cookie sheet and then place them in the preheated oven.
  9. Bake for 15 - 20 minutes or until a toothpick inserted in the center comes out clean.
  10. Remove from oven and allow to cool in molds for about 10 minutes.
  11. After 10 minutes invert them onto a cooling rack to finish cooling.
  12. Sprinkle with icing sugar before serving or dunk in chocolate glaze.
  13. Serve and enjoy!
