Gluten Free Buns are a nice homemade treat for anyone that has been avoiding gluten.
These Gluten Free Buns can be made into any shape. I made flat discs so the leftovers could be used as hamburger buns.
The buns were devoured so quickly we never got to try them as hamburger buns!
I needed to let the dough rise for an hour, plus another hour once I had shaped the dough into buns. So plan ahead for this rising time.
If you have the time to make your own buns it is well worth it!

To begin I poured some warm water into a large mixing bowl. I added in some granulated sugar and a packet of traditional yeast.
I left the yeast to activate for 10 minutes.
After 10 minutes I added in some olive oil and two large eggs.
I stirred to combine these ingredients with the yeast.
Once the oil and eggs were incorporated I measured in some Bisquick, Bob’s Red Mill Gluten Free Pizza Crust Mix, meringue powder, xanthan gum and salt.
I used a large wooden spoon to stir the ingredients together until a soft dough was formed.
Then I covered the dough with plastic wrap and a tea towel. I set it in a warm place to rise for 1 hour.
I used my south facing bay window.
After an hour I removed the plastic wrap and tea towel.
Next I turned out half of the dough onto a lightly floured (gluten free) surface. I sprinkled some more gluten free flour on top.
I rubbed some olive oil on my finger tips and gently pressed the dough out into a rectangle about 1/8″ in depth. I used a cookie cutter to cut out discs.
I wanted to make hamburger buns in case there were any leftovers after a couple of days to freeze. I repeated with the other half of the dough.
At this point you could shape the dough into whatever buns you wish to make.
I placed the discs of dough onto a parchment paper lined cookie sheet and again covered the dough with plastic wrap and a tea towel.
Then I returned the dough to my bay window to allow it to rise in a warm place for another hour.
After an hour I placed the buns in a preheated 350F oven for 12 minutes. Depending on what bun you decided to make you may have to adjust the baking time. The buns should be beginning to turn golden brown around the edges.
Remove from the oven and enjoy warm or cooled with your favourite spread!
Gluten Free Buns were a big hit in our home. This versatile recipe, with its light texture, will now be a staple in our home!
