Gluten Free Chicken Piccata is a delicious chicken recipe that is loaded with refreshing flavour.  Lemon juice and capers are the base for this citrus flavoured dinner recipe.

Chicken pieces are dredged in gluten free flour with some lemon zest added in for more citrus flavour.

This recipe will yield 4 servings of chicken piccata.

We usually eat ours over rice, but you can serve yours with your favourite sides.

To make this Gluten Free Chicken Piccata I cut two skinless, boneless, chicken breasts in half so the pieces of meat were thin.

Then I mixed some Bob’s Red Mill 1 to 1 Gluten Free Baking Flour, salt, pepper and lemon zest together in a tinfoil pie plate.

Once the flour was mixed I dredged the chicken pieces.

I made sure to coat well on both sides.

I heated 1/4 cup extra virgin olive oil in a large skillet. 

Then I added in the coated chicken pieces.

I cooked the chicken about 3 minutes per side.

Now I removed the chicken pieces and set them aside for a few minutes.

Then I added butter to the skillet.  When butter had melted I stirred in some flour followed by lemon juice and some chicken stock.

Once the ingredients were well combined, I stirred in some capers and brought the sauce to a boil. 

Next I returned the chicken pieces to the skillet and allowed the mixture to simmer for 5 minutes.

I sprinkled in some cut up fresh parsley before serving.

Have some extra fresh parsley available for people to garnish their own serving if desired.

Gluten Free Chicken Piccata can be served with your favourite side dishes.

We choose to serve this recipe on top of some rice and garnish with some more fresh parsley.

How to Make Gluten Free Chicken Piccata:

  1. Put the olive oil in a large skillet over medium/high heat.
  2. Cut the chicken breasts in half so they are thin.  
  3. Put the flour in a tin plate.
  4. Add the salt, pepper and lemon zest. Combine.
  5. Dredge the chicken breast pieces in the flour.
  6. Place the chicken breast pieces in the heated oil.  Cook about 3 minutes per side.
  7. Remove the chicken breasts and set aside for a few minutes.
  8. Melt butter in skillet.
  9. Add the second amount of flour and stir to form a paste.
  10. Slowly pour in the lemon juice and chicken stock. Stir to combine.
  11. Add the capers and bring to a boil . Stir to combine.
  12. Reduce to simmer and add the chicken breasts.  Simmer for 5 minutes.
  13. Sprinkle with the cut up parsley.
  14. Serve over rice or with your favourite sides.  Garnish with fresh parsley if desired.
