I am a fan of Bob’s Red Mill products so that is the base that was used in this recipe.

I measured some vegetable oil, eggs, almond milk and Bob’s Red Mill Gluten Free Pancake Mix into a medium mixing bowl.

I used a large spoon to combine the ingredients until no large lumps remained.

Then I dumped in some shredded old cheddar cheese and some diced ham.

Using the large spoon I folded in the cheese and ham until both were immersed in the batter.

Next I poured about 1 cup of batter at a time onto a preheated waffle iron that had been sprayed with cooking spray.  I had it set to the dark setting.

I could only cook one waffle at a time with my Belgian waffle iron.

Once the green light came on I opened the waffle iron and removed the waffle.

Ham and Cheese Waffles smothered in pure maple syrup would be a great addition to any breakfast or brunch buffet.

Old cheddar and maple syrup are a surprisingly delicious combination of flavours!
