I used to cook this meal on the stove in separate pots and it is so much easier now thanks to my Instant Pot!

To begin making Instant Pot Ground Beef Taco Pile Ons I put some olive oil in the Instant Pot and turned it to the Sauté Less function for 8 minutes.
I added in 2 pounds of lean ground beef. I broke the beef up while it was cooking.
After the Instant Pot turned off the ground beef was still quite pink.
I sprinkled in some taco seasoning and stirred to blend.
Next I added water to deglaze the Pot. This means you scrape any brown bits from the bottom of the Pot to avoid seeing the Burn message later when the Pot is coming to pressure.
Then I sprinkled in some long grain white rice. I gently pushed it down into the liquid but I did not stir.
After making sure the rice was submerged I dumped in a cup of salsa. I did not stir.
You can choose any salsa depending on how spicy you like your food. I used a mild salsa because my daughter does not like much heat.
Then I placed the lid on the Instant Pot, turned the steam release handle to the sealing position and set the Instant Pot to Pressure Cook High for 4 minutes.
While the meat and rice were cooking I prepared the other ingredients that would be the toppings. I diced some tomato and green pepper. I already had some pre-packaged Tex Mex cheese so I used that as well.
I also made sure to have a bag of corn chips ready.
Once the Instant Pot was done cooking, I allowed it to do a Natural Pressure Release for 5 minutes before turning the steam release handle to the venting position to finish releasing.
After removing the lid I stirred the contents together well.
Now it was time to create the “Pile”. I placed a handful of corn chips onto a plate.
Next I covered the corn chips with the meat and rice mixture.
Then I covered the meat and rice mixture with a handful of shredded cheese. You can use any cheese depending on what you have in the house or your personal taste.
I used more salsa now to cover up the cheese. You could reverse the order of the cheese and salsa but we like the cheese to melt.
The finishing touch was to sprinkle on some diced tomato and green pepper.
This is a family favourite that I used to make individually on the stove and in my rice cooker.

How to Make Instant Pot Ground Beef Taco Pile Ons:
- Pour the olive oil into the Instant Pot and turn it to the Saute Less function for 8 minutes.
- Add the lean ground beef and break it up while cooking.
- When the Pot turns off the beef will still be quite pink.
- Stir in the taco seasoning.
- Add the water and use it to deglaze the Pot. This means scraping any brown bits from the bottom to avoid the Burn message later when the Pot is coming to pressure.
- Sprinkle in the rice. Gently push it down into the liquid but Do Not Stir.
- Dump in 1 cup of the salsa you chose and Do Not Stir.
- Place the lid on the Instant Pot, turn the steam release handle to the sealing position and set the Instant Pot to Pressure Cook High for 4 minutes.
- While the meat and rice are cooking prepare the other ingredients for the topping. Dice the tomato and green pepper. If not using prepackaged shredded cheese grate the cheese of your choosing.
- Once the Instant Pot is done cooking, allow it to do a Natural Release for 5 minutes before turning the steam release handle to the venting position to finish releasing.
- Remove the lid and stir the contents well.
- Place a handful of corn chips onto individual serving plate.
- Top corn chips with the meat and rice mixture.
